How to make a PROPER Lancashire hotpot

- The Lancashire hotpot is synonymous with British food culture. It is without a doubt one of the most famous of our nations dishes. It's a simple affair, of good quality lamb, carrots and onions, some flavourings and good lamb stock. Top that mix off with some slices of potato and bake for a long time. What you get is a flipping delicious, deeply savoury thing. There are a few tricks and tips though to get your Lancashire hotpot right. But don't worry, Adam has you covered!
To make my Lancashire hotpot you will need:
Serves 4 people with sides or 2 very hungry greedy guts on it's own
►600g of Lamb shoulder or neck (weight after the bone is removed)
►1 large white onion
►2 bay leaves
►4-6 medium carrots
►About 2 tsp of finely chopped fresh rosemary
►1 tbsp of Worcestershire sauce
►700-800ml of lamb stock (for ref I use knorr jelly stocks)
►Salt & pepper
►2-3 large maris piper potatoes
Serve the Lancashire hotpot with greens & pickled red cabbage.

This was my favorite thing when i was living up in Preston for about 6 months or so for work. Cool experience as an American. Found this pub out in the countryside with sheep and chickens all over the place. Tried this dish and loved it. Went well with several pints of cask ale! Thanks for the recipe!!
Everything goes well with several pints of cask ale.
Mmm thanks for this, another hearty one! I am going to give this a go on Sunday instead of Sunday dinner ❤️ 😋
Enjoy Kyle. 😊👍
I'd really like to see more british recipes. I know you already have a lot on your playlist, but I just can't get enough. 😋
We've got a lot of delicious food, so there's plenty to come yet. 😋
I can’t wait to have a go at making this hotpot. I really enjoy the way you present your videos. Down to earth with a hint of naughtiness!
Awww thank you! Enjoy 😘
Looks great matey. Thanks for uploading this! X
You're welcome Paul.
Hey thanks for this. Always wondered, never thought to find out. Cheers.
4:25 What a wonderful surprise, Adam! 😊
Thank you so much for your work, Adam. You have the rare ability to impart information and knowledge to your viewers whilst entertaining them thoroughly, (mainly by carefully avoiding falling into the trap of taking yourself too seriously). This is true of all your videos, not only this one, and I know that I'm speaking the truth, because I've watched most of them over the last few years. Keep up the good work, mate! 👍🏻
You're an absolute diamond Christopher. You're all so good to me, so thank you for sticking with me all this time. ❤️
@@Adam_Garratt An absolute pleasure! 👍🏻
Really enjoyed this video Adam, I’m not much of a Xmas fan but that part in the middle worked really well. Keep up the good work! Catch you on the next one.
Thank you my friend!
Love the energy!
Thank you, Adam! Like many of the other commenters have stated, I also enjoyed this video. This dish makes me think of some really great comfort food, and it looks as if it would make anyone happy to dig in. Keep up the great work because you are an amazing chef! Also, thanks for sharing the Christmas tree decorating. That was most excellent! Cheers and best wishes! ~L 💖
Thank you Lisa darling😘🎄
Look so delicious Adam. I'll definitely have to try this one
Cheers Graham
Fantastic Adam, thank you so much. Looks delicious - and I think I found the same with chicken stock so I'm glad you were able to confirm my suspicions
You're welcome mate. Yes, lamb stock makes all the difference. I used the knorr jelly stocks for reference. By far the best pre made stocks in my opinion. Marco knew it too 😂
@@Adam_Garratt Baaa!
@@Adam_Garratt how do they not sponsor you yet
So glad to see you serve it with red cabbage, it's my favourite accompaniment to a hotpot!
Just works right?
Nice one Adam ! Love your Xmas tree and good on you for getting into the festive spirit. I love Xmas x
Thanks Marie 😘
Thank you, Adam! I always wondered what a Lancashire Hot Pot was and how to make it! I love how those potatoes look on top! Though with energy these days, I’ll use my Instant Pot. PS Your tree is lovely. 💜
Hi Adam!!!! How’re you doing?! This looks amazing!!! I can’t wait to make this!!!! It’s perfect for the cold weather! I totally agree about the lamb stock. If I can’t get it I’ll use veg stock. But it’ll have to wait as we’re getting ready for our Thanksgiving holiday here in the US. That’s a big cooking holiday for us. I thought your Christmas 🎄 tree looked nice.👍🏽 But here in the US we NEVER put up our trees until after thanksgiving. ☺️ Stay safe and thanks again!
I am good thank you Gaile. How are you out there? Keeping safe I hope. ❤️
Looks really Delicious Cannot wait to give this a go . Kudos on putting up your tree in November that 's the spirit !
Get it done. Xmas is already here right? Covid won't stop me getting pissed and eating mince pies 😂
Oh I’m soooo in the mood for Xmas now Adam 🌲 I love cold days, Xmas lights and hotpot 🥰 thanks hun x
Same Tracy babes same. Just need some joy in our lives right? Let's get drunk and eat nice food for the next 2 months! Oh wait...we've been doing that since March. Ho hum 😂😂❤️

This is such a classic, I love this dish... Beautiful lamb, gravy, the combination of softer potatoes and crispier potato’s is such a winner... Really love this, great stuff! 😊😎😍😋👌🏻✌🏻👍🏻🥘
I've had this twice in the last week it's that good 😂
My mum is smiling in heaven looking at that. Donny Osmond's version of oh holy night is my fave to play at Christmas and you are right we all need some happy right now xxx
Too right Aunty Brenda. Who knows what December will bring, so let's bring the festive cheer in now. ❤️

No worries mate. Always a pleasure!
Wonderful recipe... proper food😊😊😊 and your mog is so sweet❤
Hi Adam. I've watched about ten of your videos and everything you've made is spot on. Your hotpot looks great bud. I also love your idea of using hash browns to top your cottage pie. I initially thought, shit why haven't I thought of that? I'm going to put a thin layer of mash on then top it with hash browns n cheese n spring onions. Doing it tomorrow. I can't get to sleep for thinking about it. I fkn love cooking. Love your channel bud n you're one of the best cooks on CZcams. All the best 😊
Your version sounds divine mate!
Definitely making this one over the weekend. My Mrs who listens in on occasions now agreed with you the Christmas Dec's are going up this weekend, extordany year new rules, she said after I got you hot-pot in the oven, I can go into the loft and bring them down.
Thanks Adam 👍
Get in that loft sunshine 😂🎄

Great looking dish Adam

That looks awesome. I’ve never had anything like that here in Canada. And thanks for the Mog feature. You can’t go wrong with adding a cat commentary.
It's so good. Simple clean lamb flavour. Oh and those potatoes are next level good 🤤
This is exactly the kind of thing I think I will try to make. Your editing skills are great, Adam 👍
Always appreciate you mate. Thank you 😊
I just watched this again so I can make this right now
Just made this again yesterday...it´s a treat every time...loving it :)

You know it Lou 👍❤️
It's not Betty's hotpot its Adam's hotpot 😂😂😂 xxx
I always put slices of black pudding in mine, makes it super-rich and tasty.
Love it, I'm Lancashire so it's the law that you have to love it. My nanna made a stonking one, think we would be eating it all week long! lol I didn't mind though and the pickled cabbage is a great accompaniment 😄
Now that is a proper recipe. I make a similar dish with shin of beef but I cook it on a slightly lower temp for a little longer. That said you got the timing spot on so this week it's out with the beef and in with the lamb. Thanks for another masterclass.
You are most welcome my man. 😉👍
Gorgeous! Looked delicious. I make mine the same way but always add diced swede and a small handful of barley. Probably not authentic but very delicious.
Oooh now you sold me on swede. Used to bork at that stuff as a kid, now I love it 😘
Looks lovely Adam
Thank you Tina 😘
Slightly further north in Cumbria we add black pudding to exactly the same recipe It’s called Cumberland Taytee pot Lots of Cumbrian rugby players are feed it to bulk them up it takes it to another level
Sounds nice 😁
Oh yes! God black pudding is amazing. I bet that tastes good. Cheers David
Childhood classic
That looks soooo good. I think I have got a shoulder of lamb in the freezer, or maybe I'll pay Mr Sargent the butcher a visit. Good work as always Adam 👍👍🍽️
Cheers Trev. Yes mate, shoulder is perfect. A bit of neck thrown in too won't hurt either. Hope you're keeping safe mate
Good work Adam. This is my kind of food 🙆

Lovely looking food Adam really mouthwatering matey! Top vid as always 👍😉
Well we did say you had a ghost on live stream!!!!!
Oh god I remember that. That was me pulling your legs though 😂. Cheers David mate
@@Adam_Garratt 😂😂👌
in grimsby lincolnshire we always used breast of lamb also everything was layered as in layer of carrots then onions then meat then potatoes and done in the oven
Amazing, i am going to make it
Enjoy it Darius!
As,someone from Lancashire i'm pleased that you served it with pickled Red Cabbage as we normally serve it with this and sometimes with piccalili and sometimes with pickled Onions, but the, cabbage is the important one
Thank you for the comment George. Yes it's a great accompaniment to the dish, a welcome acidity with all that richness. Have a good evening mate
Love Lancashire hotpot......road near me Adam have all got together by lighting up the houses with Christmas lights and decks....
Good on them I say. I think we all need a bit of extra cheer right now. You stay safe and happy out there 😊🎄
I live in Worcester! I used to drive past the Lea & Perrins factory daily! Nice to hear ‘Worcester’ pronounced correctly 😁
Cheers Dan. I'd love to visit the factory and see how's it's made.
Agreed. However the sauce itself is called Worcestershire (pronounced Wus-tah shur) Sauce, not Worcester Sauce- that is an abbreviation of its name. Great recipe though, one of my favourite foods!
Love the reference for our American 🇺🇸 friends for Worcestershire sauce. The best gear to use is called Lea & Perrins but personally I use the Tesco brand it’s good enough.
One of your best uploads mate. Like it when you include cooking and stuff about yourself. Was that Lamb expensive? Also put a bit of tinsel on ya tree! 😐
Thanks mate. Erm not really for what you get out of it. This size lamb shoulder was about 8 quid. And will feed 4 people in this dish.
As I'm in Lancashire, this should be an interesting watch
Apart from the bay leaves it's pretty much as I remember mum making it.
Phew! 😂😰
I was playing.... "Skip to my Loo my Darling" on my guitar throughout the whole Vid! LOL! Great Vid Bud! And...yes Lamb prices here in the states suck! :(
same here
I have a long time subscriber that's a UK expat to US and I'll never forget the time she sent me a photo of 2 lamb leg steaks costing $14! Which is insane. I don't know why lamb cannot be farmed properly in the states, it's delicious
thank you for your effort
It's my pleasure my friend 😊
Another winner from the Frankie Dettori of CZcams cooks. Xmas tree already, why not it garnish it with Easter eggs and minature fireworks and that's the whole year covered. Seriously, a good recipe and many thanx for your continuing efforts to entertain us and brighten our lives at this difficult time. Stay strong & healthy.M
Awww thank you guys! It's always a pleasure you know that. You're all family to me.

Beetroot goes well with it as well adam looks spot on another on my to do list
Oh yes to the beetroot. I love that stuff anyway. I eat Pickled beetroot as a snack. Not sure if that's healthy but who cares! 😂
Beetroot is not a food. Pickled beetroot? Nutters, both of you. Dessert made from sampire? Can you do that? A dish of mussels?
@@jdd8826 beetroot goes with any stew soup salads sunday dinners what ever takes your fancy and if that makes me a nutter so be it you carnt beat a bit of beety 🤪🤪🤪🤪🤪🤪🤪

never thought Id say such a thing but damn I love that pot
It's a good pot Fergal. If you're in the UK. I bought it from John Lewis 😉
I had a Christmas tree up for 3 yrs until my grandmother got sick and I had to move so I had to pull it down. Good recipe & where is puss in boots? There she /he is - a beautiful looking cat
Another great recipe. Where did you get that pan from
Cheers Jackie. If you live in the UK I got it from John Lewis. £60. Which is good value for what it is. Lifetime guarantee too.

Hi Adam, did this today but it was not as good as yours. The meat mixture I made with leftover roast lamb and that turned out great but my potato were not. They sunk into the mix and were not as soft as it should have been and didn’t look as good as yours but it was edible at least x
I might try this version but we definitely need to have a serious talk about your butchering skills. Well done mate, take care and stay safe.
Cheers
Can you tell I'm not a butcher? 😂😂
@@Adam_Garratt Yep mate. skin down and scrap it off J
Cheers
That looks really good Adam. Kind of a version of a stew, in some ways. I have request, this may sound odd coming from an American but I was curious, how to make bubble and squeak. I have scene different versions, but I thought I would ask an English guy, how it is done properly.
Cheers mate. OK so bubble and squeak is usually made with leftover veg from a big Sunday roast or Xmas Dinner. That's probably why you've seen many different recipes. It's usually cabbage potatoes and sometimes leftover meat mixed, seasoned and fried. Basically a giant veg filled potato cake. It's delicious on a cold day. 😋
@@Adam_Garratt ok. Thank you Adam. I need to try this one day
Have you got a recipe for that pickled cabbage?
Hey Adam. Thanks for your honest words I’m lucky atm as I’m in Australia but I’ve been through a very similar experience It happens when you feel that you are bashing your head constantly against a brick wall & you have no options & can’t stop doing it. I know you’ll be ok because you are not out of control really & you are & will address the problem. Especially in your case when the vaccine arrives. Just want to say that you are on the money with the idea of meditation. It sure worked for me. You also have to think about your life & try to figure out if there’s anything else you need to change. I did that & it also worked.
Don’t worry about us, there’s plenty of your stuff for us to try while you look after yourself. Your brain has to know you will look after it
Very best wishes from Aussie Bob
Thank you Robert. What you said really hit home. I'll look into meditation too, anything that can help. Take care mate 👍🙏
Adam can you make Oxtail Stew?
i can. I've done a recipe a few years ago for it pal
Two things, where can you buy "Lamb Stock" and where did you get that lovely apron?
Well if you're in the UK. I found that Iceland sell the knorr lamb stocks. The apron I bought off amazon, but I can't see this exact one anymore so maybe they discontinued it. 🤔❤️
@@Adam_Garratt Thanks Adam, not in the UK, however found a source, as for the apron, will suss out a source for that too, grandson would love one just like yours. Keep up the good work...cooking can be so relaxing and rewarding.

What gas mark did you preheat the oven? I know the last half hour to briwn the potatoes are gas 5
In a lowish oven so gas mark 3-4. Depends on your oven. if its fan assisted and runs really hot, go for 3
hey Adam...looks lovely once again :) have you ever tried this recipe with beef instead of lamb? as there is a bad shortage of lamb in my fridge :D
You could do it with beef and use beef stock instead. Won't be a Lancashire hotpot but would be nice 😉

Would it be heretical to use beef?
PS: that’s my favorite hymn. Beautiful Christmas interlude and it’s a awesome tree.
Absolutely heretical to use beef. It would be nice, but a Lancashire hotpot it maketh not. 😂. But you do you bud
Looks delicious! Oh and my husband likes to bite into a big twig of Rosemary 😉😉
😂😂😂
Hi Adam can this be done with leftover roast lamb.?
Absolutely Patricia, in fact that was the traditional way of doing it x
@@Adam_Garratt great that’s Monday dinner sorted.doing a roast on Sunday and we always get a big joint (( hubby s eyes are bigger than his belly when it comes to met) lol
Can I use left over leg of lamb? If I save some of the lamb fat after cooking?
I wouldn't use already cooked lamb because you want the juices of the meat and for it to slow braise. Already cooked lamb may dry out. What you can do with leftover lamb is make a shepherd's pie. That would be good.
"Hotter than Satan's bum-crack!" Lovet it! :-)

Very much so 😂
Yum!! Tho as an expat Scouser.....I prefer my mums scouse. lol
Edit: OMG!!!! Pickled red cabbage!!! Haven't had that in years. The Aus version just isn't the same.
I actually aim to make scouse at some point. Which is also very good. How do you cope with all the dangerous creatures in aus. Those massive spiders! 😂😭
@@Adam_Garratt ha ha ha.... When they run across the windscreen at night and you don't know if they're inside the car or outside, it's a bit of a worry. They run fast across the ceiling too, but for the most part, as long as they stay up in the corner of the cornices they're fine, it's when they come down to eye level I'm not too keen on them. LOL

@@Adam_Garratt We came here when I was nine - over 45 years ago now... I guess I've adapted. LOL
Im from Lancasire we always used scrag end of neck ( mutton) i.e. it was cheap used by the poor in the mill towns. And served with mint sauce???? Pickled red cabbage was traditional. Never ever had it served with any other relish.
Can it be made with beef as well?
I was told use lamb or mutton for Lancashire hotpot and eef for Yorkshire hot pot
You need 2 tools to make life easier mate. A mandoline for slicing those potatoes and a garlic crusher for those garlic cloves. I will get a potato ricer as you suggested. Those mashed potatoes from the bangers and mash video were killer, thanks.
Ah yes a potato ricer is so useful! Perfect smooth mash. I've got a microplane for finely mincing, but I am scared of mandolins 😂

This looks delicious! There's no way I can get lamb for a decent price in the states so I might use beef instead. Not sure if that's allowed but I think The consequences will be minimal
The consequences will be Lancashirians banging on your door in the middle of the night. But beef would be great, just not the same. But more importantly why on earth is lamb so expensive in the states!? 😂😱❤️
I wanted some ham hocks for split pea soup. And a piece of meat for an ossco bucco. And a lamb shank for a nice stew like yours. I don't have a first born to give away. I'll have to get a cheap cut of beef and slow cook it for 8 hours, low and slow.
