Shepherd's pie is one of the greatest dishes this nation has created, and yet I see it done wrong SO many times! It's a simple British classic, and my version will blow your mind!
Now, to make a great shepherd's pie it all starts with good lamb. Minced ground shoulder of lamb is great for a shepherd's pie, because it's meaty but with a good amount of fat for that lamb flavour. It also comes down to good techniques, and by that I mean browning the meat, making sure the mash isn't too wet and making sure everything is cool enough so the mash doesn't sink into the filling. The difference between a good shepherd's pie and a GREAT one is following my steps.
To make my mind blowing Shepherd's pie you will need:
Serves 4
►900g of minced lamb
►500ml lamb stock
►1 large onion
►2 large carrots
►2 celery sticks
►2 bay leaves
►2 tbsp worcester sauce
►1 tbsp tomato puree
►1 tbsp of chopped fresh rosemary
►1.4kg of potatoes (I used maris piper)
►2 tbsp Butter
►2 tbsp of plain flour
►Salt & pepper

Swearing is absolutely part of real life and I hope these no swearing comments don’t get you down. I’ve only recently found your channel but I absolutely love it. Never really cooked before but your simple genuine style gave me the confidence to give it a go. Keep up the good work mate!
Thank you Scott. Nah they don't get me down, it's just my tongue in cheek humour. I like having my little outbursts 😂. Great to have you here too!
This channel is so refreshing and much more interesting than the many bland, cooking channels, filmed in pristine studio with expensive equipment and ingrediants
Thank you. Very nice of you to say
The most critical statement made on CZcams ever: NO CORN in shepherds/cottage pie!
👍👍👍
You know it Bill 😂
I like the swearing bleeped, it's real, which adds to the authenticity
You've been a subscriber for a long time. I think since I was less that 100 right? Thank you for sticking around with this fool. 😂
@@Adam_Garratt yeah it was around then. Enjoyed it back then but more so now with your improved editing and more of you just being you
@@DJSIDDERS appreciate the feedback mate.
I very rarely subscribe to channels. I have subscribed to maybe four or five channels in the last twelve years or so. But mate, what you are doing is simply brilliant. I just love everything about your content - the energy, the humour, the vibe and the honesty. Yay for the occasional swearing, yay for the worn kitchenware, yay for the kitchen that is actually a kitchen where real people cook and eat and not a fancy studio with over-polished walls, furniture and lighting. An English bloke goofing around at home, making some brilliant dishes while providing proper entertainment value - that's what CZcams is all about right there. Never hit the subscribe button so happily before.
That's a lovely comment Richard, thank you so much! Glad to have you join the family mate 🙏
Don"t change a thing you are fantastic just the way you are oi!!!
Thank you Maxine 😘
Hahaha what you said about the pans and the manky tea towel had me! 🤣🤣🤣🤣 brilliant 👏 xx
I literally bought new teatowels the other week because mine had just gone way past their best 😂
@@Adam_Garratt When they stay crusty after washing them it's time to get new ones, like my socks really.
Warts and all, best way forward.
your rants are just the BEST and soooo spot on
You can always add a glass of dry red wine. It will give your meat mixture extra depth plus add grated cheddar to potato when you mash them to give it an extra crispy topping.
I urgently desire the complete content including swearwords for my advanced english training.
Go ahead Adam
haha!
Hello Adam, first I tried your oxtail recipe and it was fabulous. Tonight's dinner was Shepherd's Pie with lamb, not hamburger. First time ever we've had lamb before. We loved it! Love your videos AND your wit. I will continue to follow you on CZcams. You rock!
Nice to hear Delia! Glad you liked it and thank you for following 😊
Where is that beautiful Christmas 🎄 of yours? I loved how you told people that this was your channel you said house , same thing 😀 keep up the excellent content of the channel please.

I want more swearing, unbleeped
I would but youtube would demonetise me if i didn't bleep it out 😂
They've actually found in tests that, if you burn yourself in the kitchen, it hurts a lot less if you have a good swear.
As an old fart who loves to cook, but rarely survives a session without minor injury, I can attest to the truth of this.
Yes more swearing but no singing......NO SINGING
It’s real life 😊
What about adding some mature cheddar on top Adam 🥳
Adam I’m cooking this tommorow for my daughter, 👍🥰
Extra mature Cheddar cheese on top: Heaven
Aaaawww one of my absolute favourites Adam! A hug on a plate 😋👍🏻
Perfect!! Cannot understand why you only have 51k subs. You are so authentic, real and funny. You're a hidden gem that I really hope gets discovered soon and your subs rocket. I will be following the shepherd's pie recipe for sure 😛
You're too kind 🙏❤️
due to the usual lack of lamb it will be a cottage pie but that's good as well...thanks Adam for all these wonderful winter recipes...nothing better then a hot pot out of the oven this time of year...stay safe mate
Oh for sure. Swap the rosemary for time and use beef stock. Perfect cottage pie. Always a pleasure and you stay safe too
This hits different watching in 2023.
Cooked it this week Adam had some good lamb mince, virtually no fat it was superb no empty plates cheers
Love your show Adam! Say what ever you like
Thank you Maria 😘
You are one of my favourite cooks. You. Adam Ragusea. Chef John. Gordon Ramsay. My go to guys for my cook ups :)
My favourite is cottage pie and I make it exactly the same as you but I use soy sauce instead of Worcestershire sauce. It’s always delicious and probably my favourite comfort dish. It’s been years since I made Shepherds pie. Maybe I should try again? Not always as fussed on lamb though.
Oh and when are the clothes coming off? I waited but you lied! 😜😜😜😜
Perhaps i should start an onlyfans! Christ, no one wants to see me naked that's for sure 😂
And another successful dinner thanks to you 😀😀😀
Great to hear Patricia! X
Yep, a potato ricer is a must have for mash (sweet or ordinary mash) best invention ever 👍
Good wholesome British food!
This is all right
You are a delight to watch, swear away, love your cooking vid ,love your pie.
Ha ha Rule Britannia next time..lol.. Love your version but could I add a splash of some good quality red wine to the lamb during cooking...? New measuring spoons..? I need to get some as my tea and tablespoons look different... Cheers mate and I love the Carry On films, perhaps they should of done one called 'Carry On Swearing ha ha :-)
Oh if you want to posh it up a bit, some red wine would be fab mate. As for the spoons ive had them years, but recently found them at the bottom of my kitchen draw when i had a sort out the other week
@@Adam_Garratt Red wine it is then... lol
Beautiful dish Adam, Shephard’s Pie is an absolute delight... You’ve put a lot of love into this and it’s looks superb, great job, LOVE it! ✌🏻😍😎😋👌🏻
Cheers mate. Appreciate it
Love your video’s you do great dishes and are very entertaining
Adam, I love your ing cooking show! Go right ahead and say whatever the you want, mate!
I learned several things here that you see at once in a video, but which is harder to get across in a recipe.
1) use a wide dish so that you keep the thickness moderate.
2) leave the lamb and veggies to steam off and cool down while you tend to the mash
3) make sure to make the mash drier than you would for mash on it's own.
Thanks a lot for some bleeping great tips ! 😂
Really enjoying your creativity with your videos. Great recipes and entertainment. Just the right mix. Keep up the great work. 👏🏻👏🏻👏🏻👏🏻
Thanks so much! Really Appreciate it 😀
Plain simple shepherds pie...agreed. Tasty 😍 subscribed xxx

Thank you bud. Appreciate it. And you're right, can't please everyone 😂
Keep the Profanity coming 😎
Thanks Adam great as always. May I may a cheeky request? Your posh new pan with lid which can also go in the oven. If you have time could you make a vid showing how to get hold of one, how to look after it (I recall in one vid you said you had to be careful not to crack it) how to maintain, clean etc. Quite understand if that sounds too dull but I for one would appreciate it and prob go out and buy one!
I'll see what I can do. I don't know if you live in the UK but of you do, I got this one from John Lewis for £60 😊

Omg that looks delicious. Gotta give it a go. Love your videos .
Hope you enjoy! X
😂 you’re funny. Love your channel
I love shepherds pie Adam my mum sometimes used left over lamb from our roast on Sunday. She had a meat mincer that she used to attach to the bench. I’m not really keen on lamb so I’ve always used beef, I’m always getting told that I’m doing it wrong but I don’t care. I’d probably enjoy it with lamb mince cos that’s the way I grew up with but I’ve always used beef or whatever mince I have. I make mine the same as yours though. I love the crunchy spud on top. I sometimes put Parmesan cheese on top before going in the oven. I don’t use a great deal of cheese as I’m lactose intolerant. Thanks for this video. I’m going to look what I’ve missed cos I’ve been away for a couple of weeks and had no internet.
I flipping love your videos!
Thank you Bonnie! 😁
Linda made your lamb Shepherd's pie tonight for tea. This is the first time either of us have eaten lamb mince, It was fantastic. I only ever had leg of lamb 40 years ago it was awful, tasted like an old sweaty goat. Cheers mate
Is this what I saw on Facebook Rich? It looked lovely. Bless you both I'm chuffed you liked it ❤️
@@Adam_Garratt Go back to FB have a butchers Linda fixed her post.
Bang on M8y. I've pulled out some lamb mince 👍
Minced lamb is $10 a pound at the grocery store I go to in the midwest United States. So I usually use beef because I can find it for around $3 a pound. Using lamb definitely tastes great though. I like to put freezer peas in mine when I make it, but never sweet corn, that sounds awful. Great video man, thank you.
Wow that is so expensive! 😱
Just cooked your beef stew and cheddar dumplings. Was a great success. Will give this a go too
Good to hear bud. Saw on Instagram and it looked bang on.
It certainly blow my mind away Adam.
That Shepherd's Pie looks amazingly wonderful and firingly good 👍😋🔥🔥🔥🔥🔥
Thanks bud
Oh my, that looks amazing. I hated shepherd's pie for years, as I've been given some seriously rank excuses for them. I made my own and loved it. Very similar to yours. X
The problem with our dishes, is whilst we have amazing food, we are very good at fucking them up as well. I've had some very bad shepherd's pie too. 😂
Your totally right. There lad, proper great brutish Shepherds Pie that. I make mine almost identical. One difference is after mine comes out yhe oven, before I rest it ibcover the top with a thin layer of strips of strong vintage cheddar cheese proper Somerset cheese from cheddar gorge, then sit it under the grill (broiler to our American friends) for a minute or two.
Nice touch! Can go wrong with a cheesy top right.
Grated cheese on Sheppard's pie is awesome :D.
Agree! 😁
Great authentic recipe (Americans eat your hearts out, or maybe not if you use this recipe) 👍
i remember watching one of your first videos. you've come along way man. great work!

OldieGoldie FabDab!
looks delicious!
Yum! Exactly how I make mine!
So tasty isn't it
Repetition of instructions is key to basic cooking techniques to be done from memory in a heck of a hurry to rustle up a meal or family meal. Yes I know all those descriptive expletives as I grew up on a livestock farm with brothers and later worked in male dominated industries. Saying oh rats just doesn't cut it!
Absolutely love your videos. You make cooking fun. Not complicated, highbrow and stuffy. Fun. Thank you.
Thanks Adam! I am going to try this as I love anything British. I purchased minced lamb already here in the US and it cost me $5.98 for a pound of mince.
Your roasting pan is seasoned not dirty!!!
You carry on Adam... people forget You don't have 20 people behind the scene just for lighting unlike the professional chefs.
Too right! Thank you mate
Looked really good! I'm a heathen and still call my cottage pie shepherds pie. Yeah, yeah, I know, cows don't have shepherds. LOL imtoo lazy to make my own lamb stock, and you can't buy premade over here, so I just use beef. BTW whoever complainedabout you swearing???LMFAO!!! They wouldn't want to watch Aussie Nat's cooking channel. He f-bombs atleast twice per sentence in most of his vids.
You keep being you, Adam! You're aces!!
I've seen a couple of his vids and you're not wrong. 😂. Thank you darling 😘
Im going to make this during the week, looks gorgeous.
Great call on the potato ricer, such an easy way to perfect mash.
I've had it for a few years now. Before I used to use a masher. Since I've had a ricer I've never looked back. Plus my inner child enjoys watching the potato worms come out the end 😂
Hi new to your channel sent here by Steve Eats
Welcome to the family John. Great to have you here 😉
Great video! I don't mind the swearing at all, it sounds funny in British English anyway :D anyway, I love this recipe and will try it out soon. I've cooked it in a similar way before but the recipe I used also added a bit of grated cheese into the mashed potatoes and that was lovely too.
Cheers Jan. Oh for sure, cheese would be a welcome addition 😋🧀
That's EXACTLY as I make it so it must be right! Well done.
It's ace isn't it 😋
Sure is, my love. Fandabbydozy!
❤️
This dish looks AMAZEBALLS!! I don't typically eat lamb, BUT in this case I will give it a try! With regards to the swearing, sometimes those words express exactly what we want to say or share how we truly feel. Please bleep away if you must, but I take no offense in them. Continue doing that incredible cooking thing you always do so well. YOU ARE AMAZEBALLS too! ~L 💖
Oh it's splendid Lisa, try it. And thank you for being so supportive 😘
Very enjoyable Adam....glad I make mine in the same way as you do.....in fact not made it for a while and instead of pasta Monday’s I’m going to follow your lead.....👍
I hope you like it Myles! Let me know
Crispy top is the best thing about the pie I remember recrisping mine under the grill They even put cheese in the mashed spuds here 🤷♀️Best rant ever hahahahaha
Crispy mash is the best. Hope you're well Aunty Brenda xx
Thanks again for another great recipe! Cooked it with pork/beef mince and beef stock so probably not a Shepards or a Cottage pie 😱 but very tasty nevertheless 👍🏻
As long as you enjoyed it that's the main thing 😉
Love this cooking channel, another great recipe! simple and delicious

Proper winter food Adam. Love it!

Good looking food as always that shepherds pie 😉
Brilliant vid 👍
Thank you David mate. 😊
Looks super tasty Adam! I love Shepherds pie as well as Cottage pie (though I sometimes use in a nice sage & pork sausage instead on occasion--not sure what you call that version. Barn or Farm pie? Castle pie??). I make it with no corn or other crap except garlic, carrots, celery, and lots of onions.. Hope you are staying safe and all.
That does sound Good Carl, I love a good sausage! Im good pal, hope youre all keeping safe too mate
Never mind the prices in America...I just looked up a meat add in Australia (Woolworths) Lamb Midloin Chops AUD$23 /per kg. Fair dinkum, I haven't eaten lamb for many years. Anyway Adam....nice Shepherds Pie...nice to remember. Cheers tkcr.🥩
That's expensive! 😱.
Love your honesty and recipes and don't ever change swear all you want stuff em. Greetings from Australia . Don't put up with the cry babies. 😂😊
Nice pie, I usually grate the carrots and onions, and rosemary 😘 lovely in this, it makes the dish... Have you watched that new series on Amazon prime with James may? Called "oh cook!"... Lots of secrets revealed like I didn't know these tv chefs don't actually cook much it's mainly prepared by an expert home economics person, this was news to me anyway lol probably why you see them with "one I prepared earlier" dishes.
Anyway great video again 👍

No worries mate. Glad you liked it
Hi Adam, I’m not sure if I ever had a proper shepherds pie. I had the American version beef and peas in it. And thankfully no corn, I think corn ruins certain recipes.
I fond corn far too sweet for things like this. I prefer my corn on the cob with either just melted butter or elote style. Delicious 😋🌽
@@Adam_Garratt I love corn, I like it on the side with butter or on the cob.

Very similar to how I make except now I learned from you how not to have the gravy bubble up on top of the potatoes! Thanks, I am excited to try again now. Lamb in Canada is very expensive and most that we have in the supermarkets is from New Zealand. About $13 Cdn for 500 grams (about 7.5 British pounds). Keep cursing when you need to!
Hi Adam, in Quebec we call the one with corn "pâté chinois". It would translate to chinese pie and is made with beef.
Wow that is expensive!
Oh wow that's interesting, I'll look into that recipe, it sounds interesting
@@rachelmarcheterre Oh my God! I grew up on this! My parents were from Quebec. Now, do you put the corn on the top like some? Dot w butter then broil for a bit to get some nice yummy brown corn goodness, or do you put it between the layers of beef on the bottom, and mashed potato on the top?
when my mom put corn on top, it was always a can of creamed corn, not regular kernel
I think you're damn funny! I also think you're an awesome chef 🥰
You're too kind! 🙏
