This Shepherd's pie will BLOW your MIND!

    Shepherd's pie is one of the greatest dishes this nation has created, and yet I see it done wrong SO many times! It's a simple British classic, and my version will blow your mind!
    Now, to make a great shepherd's pie it all starts with good lamb. Minced ground shoulder of lamb is great for a shepherd's pie, because it's meaty but with a good amount of fat for that lamb flavour. It also comes down to good techniques, and by that I mean browning the meat, making sure the mash isn't too wet and making sure everything is cool enough so the mash doesn't sink into the filling. The difference between a good shepherd's pie and a GREAT one is following my steps.
    To make my mind blowing Shepherd's pie you will need:
    Serves 4
    ►900g of minced lamb
    ►500ml lamb stock
    ►1 large onion
    ►2 large carrots
    ►2 celery sticks
    ►2 bay leaves
    ►2 tbsp worcester sauce
    ►1 tbsp tomato puree
    ►1 tbsp of chopped fresh rosemary
    ►1.4kg of potatoes (I used maris piper)
    ►2 tbsp Butter
    ►2 tbsp of plain flour
    ►Salt & pepper

    Swearing is absolutely part of real life and I hope these no swearing comments don’t get you down. I’ve only recently found your channel but I absolutely love it. Never really cooked before but your simple genuine style gave me the confidence to give it a go. Keep up the good work mate!

    I very rarely subscribe to channels. I have subscribed to maybe four or five channels in the last twelve years or so. But mate, what you are doing is simply brilliant. I just love everything about your content - the energy, the humour, the vibe and the honesty. Yay for the occasional swearing, yay for the worn kitchenware, yay for the kitchen that is actually a kitchen where real people cook and eat and not a fancy studio with over-polished walls, furniture and lighting. An English bloke goofing around at home, making some brilliant dishes while providing proper entertainment value - that's what CZcams is all about right there. Never hit the subscribe button so happily before.

    You can always add a glass of dry red wine. It will give your meat mixture extra depth plus add grated cheddar to potato when you mash them to give it an extra crispy topping.

      They've actually found in tests that, if you burn yourself in the kitchen, it hurts a lot less if you have a good swear.

    My favourite is cottage pie and I make it exactly the same as you but I use soy sauce instead of Worcestershire sauce. It’s always delicious and probably my favourite comfort dish. It’s been years since I made Shepherds pie. Maybe I should try again? Not always as fussed on lamb though.
    Oh and when are the clothes coming off? I waited but you lied! 😜😜😜😜

    Ha ha Rule Britannia next time..lol.. Love your version but could I add a splash of some good quality red wine to the lamb during cooking...? New measuring spoons..? I need to get some as my tea and tablespoons look different... Cheers mate and I love the Carry On films, perhaps they should of done one called 'Carry On Swearing ha ha :-)

    I learned several things here that you see at once in a video, but which is harder to get across in a recipe.
    1) use a wide dish so that you keep the thickness moderate.
    2) leave the lamb and veggies to steam off and cool down while you tend to the mash
    3) make sure to make the mash drier than you would for mash on it's own.

    Thanks Adam great as always. May I may a cheeky request? Your posh new pan with lid which can also go in the oven. If you have time could you make a vid showing how to get hold of one, how to look after it (I recall in one vid you said you had to be careful not to crack it) how to maintain, clean etc. Quite understand if that sounds too dull but I for one would appreciate it and prob go out and buy one!

    I love shepherds pie Adam my mum sometimes used left over lamb from our roast on Sunday. She had a meat mincer that she used to attach to the bench. I’m not really keen on lamb so I’ve always used beef, I’m always getting told that I’m doing it wrong but I don’t care. I’d probably enjoy it with lamb mince cos that’s the way I grew up with but I’ve always used beef or whatever mince I have. I make mine the same as yours though. I love the crunchy spud on top. I sometimes put Parmesan cheese on top before going in the oven. I don’t use a great deal of cheese as I’m lactose intolerant. Thanks for this video. I’m going to look what I’ve missed cos I’ve been away for a couple of weeks and had no internet.

    Minced lamb is $10 a pound at the grocery store I go to in the midwest United States. So I usually use beef because I can find it for around $3 a pound. Using lamb definitely tastes great though. I like to put freezer peas in mine when I make it, but never sweet corn, that sounds awful. Great video man, thank you.

    Your totally right. There lad, proper great brutish Shepherds Pie that. I make mine almost identical. One difference is after mine comes out yhe oven, before I rest it ibcover the top with a thin layer of strips of strong vintage cheddar cheese proper Somerset cheese from cheddar gorge, then sit it under the grill (broiler to our American friends) for a minute or two.

LOL imtoo lazy to make my own lamb stock, and you can't buy premade over here, so I just use beef. BTW whoever complainedabout you swearing???LMFAO!!!     Looks super tasty Adam! I love Shepherds pie as well as Cottage pie (though I sometimes use in a nice sage & pork sausage instead on occasion--not sure what you call that version. Barn or Farm pie? Castle pie??). I make it with no corn or other crap except garlic, carrots, celery, and lots of onions.. Hope you are staying safe and all.

    Never mind the prices in America...I just looked up a meat add in Australia (Woolworths) Lamb Midloin Chops AUD$23 /per kg. Fair dinkum, I haven't eaten lamb for many years. Anyway Adam....nice Shepherds Pie...nice to remember. Cheers tkcr.🥩

    Nice pie, I usually grate the carrots and onions, and rosemary 😘 lovely in this, it makes the dish... Have you watched that new series on Amazon prime with James may? Called "oh cook!"... Lots of secrets revealed like I didn't know these tv chefs don't actually cook much it's mainly prepared by an expert home economics person, this was news to me anyway lol probably why you see them with "one I prepared earlier" dishes.

    Hi Adam, I’m not sure if I ever had a proper shepherds pie. I had the American version beef and peas in it. And thankfully no corn, I think corn ruins certain recipes.

      I fond corn far too sweet for things like this. I prefer my corn on the cob with either just melted butter or elote style. Delicious 😋🌽

    Very similar to how I make except now I learned from you how not to have the gravy bubble up on top of the potatoes! Thanks, I am excited to try again now. Lamb in Canada is very expensive and most that we have in the supermarkets is from New Zealand. About $13 Cdn for 500 grams (about 7.5 British pounds). Keep cursing when you need to!

      Hi Adam, in Quebec we call the one with corn "pâté chinois". It would translate to chinese pie and is made with beef.

      @@rachelmarcheterre Oh my God! I grew up on this! My parents were from Quebec. Now, do you put the corn on the top like some? Dot w butter then broil for a bit to get some nice yummy brown corn goodness, or do you put it between the layers of beef on the bottom, and mashed potato on the top?
