Southern Biscuits with No Rolling Pin! - Useful Knowledge

  • Southern biscuits are easy to make. We teach you exactly how to make southern biscuits. Southern biscuits are a southern staple and these are ready in less than 30 minutes from start to finish.
    For these easy to make homemade southern biscuits, you don't need a rolling pin or biscuit cutter. Make the biscuits right out of the bowl! This is exactly how my grandma taught me to make southern biscuits so get your taste buds ready! We make our biscuits in a cast iron skillet or griddle and we will show you exactly how.
    Homemade Southern Biscuit Recipe with ingredients:
    2 Cup All Purpose Flour
    1 Tbs Baking Powder
    1 tsp Salt
    6 Tbs Butter (melted)
    1 Cup Whole Milk (Buttermilk can certainly be used to make Buttermilk Biscuits)
    Set the oven to 425 degrees and cook for about 15 minutes
    These homemade southern biscuits rise up light and fluffy so get the sausage gravy, strawberry jam, honey, or molasses ready! You can also butter these biscuits while they're hot!
    Note: We make homemade baking powder (2 tsp cream of tartar, 1 tsp baking soda). Store bought baking powder will work just fine also.

      Wanda Williams. Thanks! Yes, we do keep our kitchen clean. After we cook, it can look like a food fight happened. I use vinegar to wipe down the counter tops and the stove top. My wife won 2nd place 4-H cooking in the state when she was in high school so she can cook also. She says I supervise too much 🤣

    This is basically my recipe for baked dumplings. Baked because i make a nice chicken or beef broth with some veggies in a cast iron pot then drop in the dumplings and put the pot in the oven. The dumplings bake on top and boil on the bottom and are most excellent!
    Anyway i tried your way of making biscuits and it was so easy and delicious that I'm throwing away my other recipes! So much easier! And I only have to remember one recipe for dumplings or biscuits!
    I did sub half of the flour for whole wheat which in my opinion gives a superior taste and texture. Also for those of you who live in places like me where you can't find buttermilk, using store bought kefir (plain) works well as a substitute in baking recipes.

    Thank you soooo much I tried other rolled biscuits and they do that fancy mixing on top of a whole bowl full of flour. I guess they over work the batter and the biscuits do not come out the same I loved your way. I made 3 different batches right now yours were the best.

      Cheryl. I don't use any baking powder from the store. It works just as well and it doesn't have stuff in it that I can't pronounce. Good luck with biscuits. I make them every Saturday morning.

      Awesome man, getting a little late for me now, but I will definitely be making these bad boys in the next couple of days and will let you know - as much as you push the homemade baking powder, must be something to it and I'll have to try it! Otherwise I just love the idea of biscuits hand formed on a larded up cast iron skillet with no roller needed! I have chicken and pork at the ready to be fried up and always have some gravy on hand...so...yeah. I'm stoked!

      Jamie! I made these man. They turned out great overall - I did use store bought baking powder and used a little heavy cream instead of all milk...can't believe I ran out of milk! the flavor and texture was great (soooo, nice not having to roll them out). Only slight problem i had was that they didn't rise quite as much as I would have liked. They tasted great and were super moist and fluffy otherwise. I'm guessing I overworked the butter in (I used a fork, don't have the pastry cutter) and maybe the heavy cream had an effect on the rise. i dunno, but they were still killer and I'll be making these again! Thanks so much Jamie!

      MrDFC1111 Awesome! Glad you liked the biscuits. The lack of rise could have been because of the heavy cream. The baking powder starts reacting when all the ingredients get wet from the milk. I also hate running out of milk. I've made these with all different kinds of milk and even water 😀.

    So, I'm in love with the simplicity and the beauty. I don't like carbs, but I would love to make these when I do on the weekends sometimes. This is the first time I saw melted butter instead of frozen. Could you tell me the difference?

      Eshandra Heath. Hi. The butter is cut in with a pastry knife or fork so it just always seemed easier to use melted instead of frozen. I understand limiting carbs. I make these on Saturday mornings but almost never during the week unless I make a batch for my coworkers. Best of luck making these!

    Very similar to how my grandmother made her buttermilk biscuits. The only difference is she used a hot skillet as well as hot butter. So it sizzled when being added to the mixture.

    Try using coconut oil and cut it in cuz it comes solid a lot of times. Just would make it a little healthier but great recipe thanks from Texas😄

    I was very pleased with the taste and ease of making these biscuits. The texture of mine wasn’t the best. They were very crumbly. Moist but crumbly. What did I do wrong or what can I do to get them to hold together better?

      Dave. Hi. You did nothing wrong. It’s been an age old question when biscuits are crumbly. It’s funny you asked today because just last weekend, my biscuits were a little crumbly. The ONLY thing I did different was to use a different brand of flour. We were working at the hunting camp and I grabbed a bag of flour on the way to make some biscuits. I used the camphouse oven probably 20 times last season so this is why I feel it’s the flour. Also my recipe hasn’t changed since my grandmother taught me. I use King Arthur all purpose. I have used White Lily and it’s also good.
      If changing flour doesn’t seem to help, I would look at turning the oven up about 15 deg. They will brown faster and won’t quite cook as long. Cooking longer can dry things out. Hope this helps.

    I use lard- I have never seen any one melt the butter! Very interesting! I’m totally shocked/ I make biscuits every morning for my husband- with strawberry 🍓 preserves and I roll em out on the counter and make a Big ol mess lol! Tomorrow I’m gonna try your way!!

      Hi. I’ve made them with lard many many times. Honestly the butter or lard just needs to be soft so that you can cut it in easy. My grandma taught me this way when I was little. She had such a small kitchen she probably did it this because had no room to roll them out. My grandma would say to make them like a thick pancake batter. Enjoy!

      Hi. I melt the butter because I can cut it in with a pastry knife or a even a fork. I really dislike trying to cut in cold butter. It’s a pain. The melted butter just seems easier for me.

      Hi! Yes you can. I have actually used water to make biscuits when camping and I didn't have milk. It does slightly change the taste but the biscuits are still good to eat. Rice milk should also work. Good luck baking!

      Hi. You don't have to use buttermilk. I have made these biscuits with whole milk, 2% milk, and skim milk. They taste better with whole milk or buttermilk. Honestly, one time when I was at hunting camp, I made them with water :)

      You could make a substitute buttermilk by adding a teaspoon of lime juice to a cup of milk. Let it sit for a few minutes and use it as if it were buttermilk

      VEE ROBINSON no problem but if you don’t have a cast iron, you can always use any type of cake pan, a 9”X13” long cake pan. You can really use any type of pan. I’ve even used my cookie sheet pan.

      Upcame Hill. Hi. No they are not bitter at all. I also make these with buttermilk but take out the cream of tartar. Those are also not bitter. It’s probably why the salt is part of these old fashioned ingredients. Thanks for watching.

      I am always experimenting with biscuits. I used your method earlier today, but used about half can baking powder and have of the homemade tartar powder. My idea was that the tartar would cause a quick rise as the biscuits sat a few minuets and then the canned baking powder would cause an extra rise in the oven. Doing it this way it didn't actually rise any higher. I did find that using less canned powder and using the tartar to replace it made the biscuits less bitter. Next I will try doing it your way completely using all tartar soda and see I it comes out.

      Upcame Hill. While you are experimenting, also try using buttermilk and only 1 tsp of baking soda. I did this at a relatives house during the holidays. They had no baking powder. The biscuits rose nicely.

      Tinkerbell rocks. Hi. It’s a tablespoon of baking powder not soda. Many folks make that mistake. I’ve done it a long time ago. Baking power (if you make it at home) is 2 teaspoons of cream of tartar and 1 teaspoon of baking soda. You can purchase baking powder but it’s scarce right now. If you have baking soda, I recommend getting some cream of tartar the next time you grocery shop then you can make you own.

    There is 1259 mg of salt in 1 tsp of baking soda, so I would be leaving out the salt.

      As a southerner I disagree. This recipe came out of MS from my family and I live in Alabama. What’s not southern?
