  • A stew is a dish made of vegetables or meat that are cooked slowly in liquid. In Kerala style stew recipes, the solid ingredients are mostly cooked in coconut milk. In Malayalam. it is also called 'Ishtu'. Unlike many curry recipes from Kerala, this dish is mild in spice level and have a slight sweet taste from the coconut milk.
    In this video, you will see how a typical Kerala Vegetable Stew is made. This 'Ishtu' makes a classic combination with Appam, Idiyappam and bread.

      You can pressure cook the vegetables in pressure cooker by adding little water and then add coconut milk. And, cook further with the lid open.

    My fresh homemade coconut milk
    (thin 2. n 3) split while I was boiling the vegetables… is it because of the high heat? Otherwise how should I cook ?

      A little bit of curdling is totally fine. However, you may try any of the following.
      1. Cook in a medium flame.
      2. Stir frequently.
      3. Add more water to the 2nd extract and 3rd extract.
      4. Cook the vegetables in water and add thick coconut milk at the end.

    Can we try just adding mutton or other boiled non veg items on this veg stew gravy and make it non veg stew?

      Absolutely...pan fried chicken/ boiled egg with salt & pepper & add to this. This is if you want to make veg & non veg stew at the same time.
      Else add chicken with the veggies itself....that's how we do it.
      Also we add 2 ingredients for more flavor...bay leaf & curry leaves

    I used a pressure cooker till one whistle but my coconut-milk got split. The flavour has turned out nice though!

      Dont use pressure cooker make in open pot use any pot except aluminium for best Benefits from the food

      And if making in cooker, give veggies a whistle without coconut milk...and add that milk later...n continue the process without lid

      Reheat in a low flame. It is better to avoid boiling it as it will curdle the coconut milk.

      Usually, coconut milk is added for making the stew. There may be taste difference if normal milk is used. Just try once and see. :)

      If you are using dried green peas, soak is needed. If using, fresh or frozen green peas, there is no need for soaking.

    Whats the difference between thin and thick cocunut milk? If we buy tinned cocunut milk , should we add water to make it thin ?

      Sorry for late reply. Thick coconut milk is the first extract that we take from grated coconut. Thin coconut milk is the second extract in which we add more water. You can add normal water to make it thin. Here, the cup I used was of 250 ml.

      It is boiled as shown in the video. You may also pressure cook the vegetables in little water and then add it to the stew as well.

      Cook cheyyatha vegetables aanu add cheythathu. Vegetables pressure cook cheythittum add cheyyam.
