Mmmm we often cook with Pumpkin, Pumpkin Gnocchi is delicious! We'll cut the pumpkin, leave the skin on & steam for 30-40 minutes, then scoop off the good stuff... a lot easier than peeling, but harder to get nice cubes 😉
@dominicdurocher3984, pumpkin gnocchi sounds so delicious!! I'd also love to make pumpkin ravioli. I had it at one of the upscale restaurants Guillermo used to work at. Can't remember if it was Aix or Maison Boulud. I'd also quite like to have a pumpkin beer one of these days!
