15kg = 9 ltrs of water
20kg = 12 ltrs of water
25kg = 15 ltrs of water
30kg = 18 ltrs of water

When do you put the salt? At the begging with all the others ingredients or in the middle of the process? Thanks

We put at the beginning of the process. But don't put salt and yeast together. If salt directly touch yeast, it causes to reduce the action of yeast.
