Here’s a no maida fruit cake on popular demand! Many of you have asked to share a no maida cake with you keeping in mind that it is refined flour and mot heathy. So here it is! A fruit cake that is made without refined flour, is eggless, and can be made without an oven too!
This fruit cake is made with rava/ suji or fine semolina. This no maida fruit cake can be baked in a pressure cooker, kadhai or even an oven at the temperature of 180C.

Recipe :
No Maida Fruit Cake
Preparation Time: 20 minutes
Cooking Time: 35-40 minutes
Serves: 5-6
Ingredients:
2 cup rava, fine semolina
½ cup refined vegetable oil
1 cup curd
1 cup sugar
1 cup milk
¼ tsp salt
½ tsp baking powder
½ tsp baking soda
1 tsp cardamom powder
½ cup tutti fruity
1 tsp flour
Method:
Prepare the tin for baking by lining it with butter paper and brushing the bottom and sides with oil. Preheat the ove to 180C for 10 minutes or cover and preheat a kadhai/ pressure cooker with 2 cups salt spread at the bottom.
Grind the rava in a mixer to a fine powder.
Blend together the curds and the oil. Add the sugar and blend well. Mix in the milk.
Add the baking soda, rava and mix well. Allow to stand for 5 minutes.
Rub the tutti fruity with the flour.
Add baking powder, cardamom powder to the batter and mix well.
Fold in the tutti fruity.
Pour the batter into the prepared tin and bake in the preheated oven for 35-40 minutes or till a skewer inserted comes out clean. Cool before cutting.
