    Pav Bhaji in 15 minutes
    Preparation Time: 5 minutes
    Cooking Time: 10 minutes
    Serves: 4-5
    Ingredients:
    5 medium potatoes
    1 large onion
    6 tomatoes
    1 carrot
    1 capsicum
    1 beetroot
    ½ cup peas
    8-10 beans
    ¼ cup garlic
    2 tbsp pav bhaji masala
    2 tbsp oil
    4 tbsp butter
    2 tbsp Kashmiri red chili powder
    Salt to taste
    Finely chopped coriander
    Pav to serve
    Finely chopped onions to serve
    Lemon wedges to serve
    Method:
    Finely chop the onions. Finely chop the capsicum.
    Peel and dice the potatoes, carrot, beetroot and chop the beans.
    Dice the tomatoes.
    Grind the tomatoes and the garlic to make a smooth puree.
    Heat butter and oil in a pressure cooker. Add the onions and sauté till golden.
    Add the capsicum and sauté for a few seconds. Add the remaining vegetables, tomato puree, 1 tbsp Kashmiri red chili powder, pav bhaji masala, 1 cup water, salt to taste and pressure cook for 2 whistles.
    Release the pressure and mask the vegetables well.
    Heat 2 tbsp butter in a pan, add 1 tsp Kashmiri red chili powder and the mashed bhaji.
    Mix 1 tsp corn starch in 1 cup water and add to the bhaji. Mix well.
    Simmer for 2-3 minutes.
    Meanwhile toast buttered pavs and serve.
