Better to use freshly roasted Robusta so that the comparison is more fair. I've tasted freshly roasted Robusta and it tastes better than instant coffee from the supermarket. And shouldn't you drink plain water in between each coffee so that your taste buds are "reset"?

Hello. It does not matter which coffee you use as long as it is very different from the others. The point is to give some contrast so that it is easier to pick out flavours in the coffees. I like using a low quality coffee as then it is normally easier to describe sweetness, acidity, etc. Also if you feel like drinking water in between there is nothing wrong with that.

What grind size have you used ?

I would use quite fine like you would grind for making 300g - 500g brew on a V60 or slight coarser than for my aeropress recipe. Just make sure all the grounds get wet when you pour.
