    OMG the dropper shooting out 😂
    So you don't cook the alcohol off as much, pour the jello in the alcohol and just let sit cold until it's disolved.
    A syringe is great to use too
    I love this detailed video, thank you for doing it.
    Be very careful selling these without a liquor license.
    Each state has its own set of rules on the amount of Alcohol you can use.

    Hi there
    I tried this recepie however after removing the gummies from the mold they were sticky. I think more gelatin should be added. Do you?

    • @darkengine5931
      @darkengine5931 Před 3 lety +1

      I think it's worth a try. Precise gelatin ratios to liquid tends to be quite finnicky and especially when you are going for gummies since the precise amount can vary quite a bit depending on the bloom strength of the brand. She's using Knox in the video which has a pretty high bloom strength of 225 (above "gold" category and working towards "platinum") so she might not need so much. I use a brand which only has a bloom strength of 210 and what I find makes for a non-sticky, smooth, chewy gummy is 17.5g of gelatin per 100ml liquid.

      @@darkengine5931 thanks for the detailed explanation

    • @darkengine5931
      @darkengine5931 Před 3 lety

      @@andreawilliams2095 Cheers! I'm still a novice to making gummies and experimenting but I'm finding that erring on the side of what I think is a little too much gelatin is also better than too little, or else we get something halfway between jello and gummy. I haven't figured out the bare minimum gelatin we can use to save costs (something I'd like to figure out eventually since the gelatin tends to be the most expensive part of any gummy recipe), but using what appears to me like a little too much at least prevents the whole thing from being botched.
      Another thing to keep in mind if we're trying to match the stiffest and driest gummy textures produced in factories like Haribo gummies is that they subject those to a drying process for preservation which makes them a lot firmer along with a very thin coat of oil which makes them glossier and slicker to the touch. Anything freshly homemade will tend to come out quite springy at first until we dry them out (perhaps storing them in a dry and sealed location with desiccants to absorb moisture) and ever-so-slightly sticky even after setting. But it shouldn't be getting stuck to your fingers or unable to stretch quite a bit before tearing like jello if we used enough gelatin.
      One final note is that you can somewhat rescue the dish if the consistency comes out more jello-like than gummy-like (not enough gelatin) if the flavor is there (this process will dliute it slightly). What you can do then is take your jello-like gummies and slowly melt them over very low heat. It's crucial that we melt them using very low heat and never a boil since boiling will denature/destroy the gelatin. Then in a separate dish, you can bloom some more gelatin in the bare minimum amount of water then add it to the melted mix. That will dliute the flavor a bit but once the new mix cools down in the fridge, it should come out firmer and more gummy-like than the original.
