I think Luigi's Mansion's "call for Mario" button deserves a shout out (pun intended). All it does is make you yell Mario's name, which is never used for any gameplay function and there's no real reason to do it.

This may not fit the video concept, but I was instantly reminded of the izuna drop/piledriver you can do in Okami.
The game never tells you how to do it, and there’s no technique scroll you can buy to learn it, like most of the combat abilities in the game.
Okami is my favorite game of all time, and I’ve 100% it probably 4 or 5 times and have played it for hundreds of hours, but I didn’t know you could do this until my most recent playthrough this year!
To preform it, you have to have a reflector equipped as a sub weapon, then simply block an enemies’ attack with triangle just before it hits you; like a parry in other games. Then Ammy will automatically preform the move.

When you put your baby into soothe mode, you’re supposed to take your controller and cradle it in your arms like you would a real baby, then you just gently bounce it up and down like your calming the infant. It’s cool, it’s weird but it’s a neat little feature. ^_^

Shenmue 2 has a button command in a QTE where you’re not supposed to press the button when prompted. You’re told not to move and then a QTE is triggered. You naturally want to press the prompt because you have a blade to your throat and you’ve been conditioned to follow these button prompts that have a distinct sound, especially if you also played the first game. But if you press anything you’ll fail and you’ll have to wait until the next day to retry it. The whole point is for Ryu to learn the martial arts virtue of remaining calm, but it’s weird because it’s the only time where you have to go against the mechanics of the game’s QTE system.

Speaking of suicide buttons, Battle Tanx on the N64 (at least the second one), in multiplayer if you hit all the C buttons at once it blew up your tank. It makes more sense in Battle Tanx because you have limited tanks and if you had one that you didn’t want or was weak against the rival one, you’d want to swap to a new one.
Battle Tanx also had a secret button command I never knew about until around the GameCube era.
In the second one, if you had I think at least 15 of a power up item, if you hit A and B at the same time it activated a secret power up and would take 15 from your inventory.

I don't think it was out when this list was made, but in the same category of Pheonix Wright's moveset, Tom and Jerry in Multiversus did something similar!
All of their moves are just them fighting, Tom trying to hit Jerry with a mallet or catch him, and Jerry dodging him like the cartoons. You just happen to get in the middle, they aren't actually fighting the opponent.
I just think that's a super neat detail.

In Mirrors edge if you land on the big red landing pads on your back, she gets up instanly. Landing normally on her feet puts her in a long recovery animation. I doubt that this was intentional tho

I agree the GTA 5 ragdoll function is one of the weirdest button commands I've ever seen, however, I will also say it's one of my favorite b/c it's so unneeded but they knew people were going to have fun using it so they add it anyway. My favorite things to do with it are to enable the invincibility cheat & either fall down Mount. Chiliad or jump in front of people or hospital front doors & see their reaction.

It might not count as weird, but unique or different at least. In the Godfather game, they describe the unique control design (black hand) in a behind the scenes type in-game video. In order to strangle an enemy, you target them with R1, grab with L1, then push in on both analogue sticks. This was meant to actually simulate the hand position and feel of strangling someone.
Interesting idea, but maybe a little much?

In my experience the Nioh 2 controls are incredibly well done. It just takes some time to get used to, but they made it as intuitive as it possibly could be IMO considering you have dozens of combat options available to you at any given moment. Hell of a game, and we’ll worth learning the controls to experience the best melee combat in any game ever!

In the PC games Freespace and Freespace 2 there is a key press to "Target my Target's Target" which has the probably unintentional effect of allowing you to target a friendly ship, hit the command and allow you to target an untargetable ship due to the stealth flag, likely due to AI limitations
