How to make Meringues to decorate your cakes - Meringue Kisses and Rosettes Recipe

- Hi and welcome back to my kitchen. Meringues can make the perfect decoration for your cakes, by adding colour and a different texture to just buttercream.
Throughout the video I show you step by step how to make meringues from egg whites and caster sugar.
To make around 60 - 70 meringue kisses you will need 70g of egg whites and 140g of caster sugar. The meringues are then baked in the over at 100°C for between 45 minutes - 1 Hour depending on the size of your meringues. I also show you different ways to colour them and what piping tips you can use to create different effects.

I made these as per your suggestion. Only thing I used icing sugar instead of castor sugar. And vanilla flavouring. It was soo yummy. Thank u so much

Best way of making chewy meringue is it add some vinegar or hear sugar on baking tray before adding to sugar. Tks steve

I made these meringue kisses using your recipe, it came out nice for a first ever try.But after it has cool down in the oven with the oven door slightly opened.I brought them out few hours later I discovered that it was sticky when touched and it sticks to each other.want to ask if it's normally so or I did something wrong?

Needs to be either wrapped in cellophane bags or in Tupperware, the key is that they are airtight. If not they’ll go a bit sticky but you can always pop them back in the oven if so for around ten mins. They’ll last like 2-3 weeks! :)

This tutorial has taken away all the nervousness ive had about doing meringues. Can I ask how you thin down your royal icing for dripping
I'm so glad. Meringues are so much fun to make, definitely give them a try. In regards to my royal icing I always use Royal Icing sugar which I buy from the supermarket. You then just add water. For the thin drip on this cake I just added more water, so it wasn't as thick.

Hi Debbie, if you wanted to make the rosettes into lollipops you would add the sticks after they have been baked. You could use some chocolate or candy melts to attach the sticks to the back. I hope this helps.
I made the lollipops, wat i did is placed some maringue on my silicon mat then attached the stick onto it the piped the rosette ontop then bake them. It worked just fine and they sticked together pretty well.
