Don't stop with onions. Since being diagnosed with heart failure, I've had to improve my diet quite a bit and salads are a go to. I cut carrots into matchsticks and finely slice celery on a bias to quick pickle as well. Not too much salt and I boil my water, vinegar and sugar to combine before letting cool and adding veggies. Easily lasts a month refrigerated. I reuse pickle juice for cucumbers, jalapenos and red peppers.
My dad loves pickled foods. He usually buys pickled beets, then uses the left over juices and jar to add boiled eggs or whatever, and lets them sit in the frig a few days before eating.

Lol we literally eat pickled onions by the jar over here in the uk. It’s something most people have in the cupboard and is a constant for any party food with cheese and cold chopped up hotdogs. We also have them on crackers, butter the cracker add a wedge of cheddar and a pickled onion on top x We don’t slice them though they’re just pickled shallots. I pickle my own in white wine vinegar, sweetener and salt and pickle cabbage like that too. Xx

The hearts of palm recipe I'm currently obsessed with (don't know where I found it): Brazilian Avocado & Hearts of Palm Salad 1 cup yellow cherry tomatoes, halved ½ small sweet onion, cut into thin slivers 2 14-oz. cans hearts of palm, drained and sliced ½ inch thick 1 Haas avocado, cut into ½-inch pieces ¼ cup cilantro, coarsely chopped ½ tsp. lime zest, finely grated 2 tbsp. lime juice, freshly squeezed 2 tbsp. mayonnaise 2 tbsp. canola oil Salt and pepper, to taste In a medium bowl, combine cherry tomatoes, onion slivers, hearts of palm, avocado, and cilantro. In a small bowl, whisk together lime zest, lime juice, mayonnaise, and canola oil. Season with salt and pepper to taste. Gently toss dressing over salad. Serve immediately.

Pickled Red Onion is awesome. I've tried kombucha pickled red onion, and it is so so good. Instead of vinegar, the recipe use kombucha. The sliced onion was blanched, and all sort of aromatic was added, like black peppercorns, mustard seeds, ginger, chili flakes and some salt. Pair heavenly with bruschetta, and definitely awesome with cheeseburger.
It is a bit like circa pyaz (literal translation is vinegar onions) just a few differences Edit: Thanks Beryl for liking the comment. Actually if you add a piece of beetroot it will turn perfect red. The only thing we do different is boil the vinegar and water mixture.

Second section of video... A lot of vegetables that are underrated or Earth vegetables like rutabagas. Rutabagas are extremely savory. There's other earth vegetables that people like to ignore. One of the most amazing soups I've ever had, was a British soup that had rutabagas and other Earth vegetables in it and lamb. It was amazing. I thought I wouldn't like it, because rutabagas get such a bad rap. But that soup was amazing.
best trick: add the red onion skins to the bottom of the jar before adding the rest. then you end up with RIDICULOUSLY red onions.
