I love Gennaro and he is absolutely right about using the bits and bobs in your cupboards, especially in a time like this. People that love food always have basics like onions, garlic, carrots, celery, potatoes kicking about. I'm married to a Spaniard so there is always panceta, chorizo, chickpeas, beans, lentils and rice. Not buying produce regularly and using what's in the house makes us better cooks. It's basically old style Mediterranean cooking. Run out of pasta - make some. Make pizza, it's easy (Gennaro shows you how). Nothing is wasted in Spain and Italy where even stale bread is the basis of a fantastic soup. Recipes like this don't have to be perfect. If you don't have an ingredient chuck something else in. You can see that this soup will be absolutely delicious. Classic Italian dish.

I'm really enjoying these lockdown odds and ends recipes! I usually go shopping several times a week because the supermarket is within walking distance of work, so I buy the ingredients specifically for the meals I'm planning on cooking. I've only been going shopping every other week since the beginning of March so I'm ending up with a weird assortment of bits and bobs towards the end of the fortnight before I can go out and restock!

Gennaro makes simple dishes sound like a description of the Mona Lisa. He can explain things in such a simple way that all you can do is drool by looking at him cooking. It's too bad CZcams cannot transmit smells but with Gennaro's explanation you immediately know what is smells like. 'Na zuppa buonissima. Grazie Gennaro. I still remember when you came to Malta & Gozo and made our world famous "pastizzi".
