Today we're making a hearty and delicious minestrone. The flavor of this soup is amazing. Well, at least imo lol. The taste tester, of course, had his own strong opinion. I hope you enjoy this minestrone recipe!

INGREDIENTS WITH GRAM AMOUNTS (Gram amounts are estimates)
½ cup (112 grams) extra virgin olive oil
¼ pound (112 grams) pancetta - diced
1 large onion - diced
2 medium carrots - diced
2 celery ribs - diced
5 cloves garlic - minced
1 15-ounce can (425 grams) cannellini beans drained
1 15-ounce can (425 grams) lima beans
1 bunch Tuscan kale - stems discarded and roughly chopped
8 sprigs fresh thyme or 2 teaspoons dried thyme
1 14-ounce can plum tomatoes - hand crushed
1 Parmigiano Reggiano rind - optional
8 cups low sodium vegetable stock - plus more if needed to thin
3 medium Yukon Gold potatoes - cubed, about 2 cups worth
½ cup flat-leaf Italian parsley - minced
salt and pepper to taste

I made this yesterday--so good! Everything was the same as yours except the greens and pancetta. I used only ground pork and seasoned it like sausage and arugula greens. The combination of the fennel from the pork and the thyme was PERFECTION! I have always hated Minestrone soup, but your version is the new standard. My family loved this soup! 😋😋😋
Just a guess. He didn’t like the kale. I’d use spinach.

I know it's probably a bit but I would freakin' mad if I made home-cooked italian food and my kids were like, eh.
Add tortellini, or Italian sausage, or even pasta like the tiny ones- and they’ll love it! It won’t be minestrone pet se, but your kids will love it like mine do!

I’m impressed your son will even try a vegetable soup, forget giving it a score over 5 ! He’s growing up to be very good in his diet and eating dishes that most kids his age won’t even look at. Kudos to you for raising him up right. Looks like a great recipe. Will have to try it when my house is done being renovated. Your son reminds me a lot of me at that age - I couldn't be bothered with minestrone unless I'd loaded it with shredded mozzarella, and I sure let me parents know it! Appreciation for veggies usually comes as they get older, or not at all! He had me dying laughing, though, so kudos to him. This recipe looks great, I've never used pancetta in it before! I make Minestrone occasionally, because it's healthy and tasty. I don't put a lot of beans in mine, because they're not my favorite, so I add some pasta as well. It's a very versatile soup and your version looks really good too. But I totally understand your son's reaction, lol. Perhaps he'll appreciate it more as he gets older, like his dad.

Thank you! 👍🏼 *Update* I made it with a couple of substitutes because we are far from a store. I used Turkey Italian Sausage rather than Pancetta. Added some oregano. I cooked pasta separately to add at serving time. Used 15 oz. can crushed tomatoes but I gotta tell ya, it turned out so good! Hubby and I (70+ years) are still recovering from Covid and I managed to make this. The beauty is that we can eat it for several days and both rest and recover. SO good! Thank you! ❤

Best minestrone that I've ever had. That said, before this I'd only ever had it out of a tin. I've been cooking fresh food pretty much daily now for about 10 years now, and this one was a "must do" for me. It's incredible. The tinned versions of minestrone are awful compared to this.
This recipe here will yield about 8 to 10 portions and I can do it for around £7.00 - £8.00. That's just brilliant.
I cook the pasta separately to avoid it going stodgy once it cools down. That way I can split it into portions and freeze it. And it freezes perfectly.
Less than £1.00 a portion, come on, what's not to love!!!

This soup was excellent and I mean excellent!!! I’ve made minestrone many times before but this was by far the best!! I also added a bay leaf and some basil. You are an extremely talented chef!! I am Italian-American from LI and I’m very picky when Italian food. But your recipes really nail it!!!!

Dear Sir, I made it southern style and I don't mean Calabrian. We have an organic veggie garden and can stuff every year. So in place of Tuscan kale, I used collard greens. In place of tomato, I used our own canned tomato with okra. In place of limas, I used pintos and great northern beans. In place of pancetta, I pressed then cubed firm tofu and marinated it in a smoky mix. I used my own veggie stock. Just tasted it. Buono! Love from Alabama ❤️

She loves this dish.
We utilized her homemade vegetable broth.
She made some "no knead bread" to go with the soup.

I cooked along with you, and added rosemary, pumpkin and the Parmesan rind. I’m vegetarian so didn’t put in the pancetta, but it was a much more flavoursome soup than I usually manage, so thank you very much!

I've got to tell you, I don't usually leave comments I'll just try a recipe and decide if I like it or not or if I should change it in any way. This Minestrone is among the best I have ever had. I have a culinary background, Have traveled immensely, Live in New Jersey (please don't hold that against me -haha), and am a definite "FOODIE", I love soup and minestrone is one of my favorites. Your Son is cute and I see in your face your hoping for that home run of 9.5 or perfect 10 but I'd say if he has tried what some people out there call Minestrone soup He'd agree with me and give you a 9.98 because this is put simply the best recipe I have ever tried for minestrone soup!! The ONLY thing I changed (Added) was some Ditilini in mine, I just like the pasta.

For years we were vegetarian and made the Laurel’s Kitchen Minestrone recipe (yes, that dates us!), and it’s good but your recipe looks amazing!

Delicious! Everytime I cook a ham, I always keep some for a good minestrone...I'm definitely going to look for dinosaur kale, never heard of it before! I've always put some really small pasta in there, but I'm going to try potatoes instead!

Looks good. One thing I do is substitute any recipe that calls for kale, with spinach (I loath kale).
I made a really nice ham and lentil soup this weekend with a desalinated ham steak, mirepoix, lentils and a quart of chicken stock. It's amazing what you can do with only a few ingredients. For around six lunch sized bowls, it cost me about $7.50. Even the Mrs. was really happy with the offering.

Your version is very similar to our family version. We don’t have a potato we had cauliflower instead of kale, the zucchini, but we also had chicken to make a little bit more of a hearty dinner time type meal. We use the prosciutto or the ham if we have it if we don’t real minute, it’s nice to see that other people have versions of it that look as good and taste as good as yours because they made it your way now when I make it again, I will probably keep the kale keep the zucchini, which I always had right near the end because I don’t like it to squishy I’ll probably add garbanzo beans along with the cannellini beans one step you do very much differently than we do right near the end. When you’re kind of thickening it, we add a very heavy, the tomato paste with Panko Romano I love the soup is a good way to clean out the fridge and make a very large quantity of soup when I make it I tend to make somewhere between four and 5 gallons at a time.

4:49 🤩 that picture of James is too much. My Mom loves to make Minestrone with almost the same exact ingredients, one day I had some small frozen meatballs that I dropped in, now Mom always makes it that way.
Another wonderful soup from S&F! The Taste Tester definitely missed the mark on this one. One interesting note. I can't find the Pancetta in the finished product. It's as if it melted into the soup. Whatever the case, this one's definitely going into the rotation. Thanks Jim!
You cook like my mum, and it is a compliment. We are from Provence with italian origins on both sides, we dip the bread like you do, same minestrone recipe with some variations sometimes because it is a all you can eat veggies kind of soup and my mum also make the pasta deep pan you made in another video. Are you from Italy originally?

FWIW: For me, this is the only recipe I cook with the expensive EV and use plenty of it. That and the Parmesan rind are what makes this Minestrone for me.

Growing up many years ago, Minestrone, which we called minestra, was a staple in our house. I hated it. Now I make it often in the winter.
Perfect timing James! It's in the high 30s with a little snow in the Bay Area right now. I forgot the pancetta and ended up using a mixture of veggie + a dash of chicken Better than Bouillon… fantastic. If I weren't so lazy I would've served it up French onion soup style with a big ol parmesan + sour dough crouton on top.
One bit of feedback though: I strongly prefer the videos where you put the name of the recipe in the title instead of something click baity like "easy pasta dish" or "best thing ever".
A great topping on there would be some fresh basil pesto. Flavor bomb
