(Boneless shot rib)
(Or thin sliced Rib eye or chuck)
-Kombu (Dried kelp) 1g
-Water 150ml
-Apple 1 (190g)
-Garlic 10g (as peeled)
-Ginger 5g (as peeled)
-Sugar 1tbsp (15g)
-Sake 3tbsp (45ml)
-Honey 1tbsp (20g)
-Soy sauce 5tbsp (75ml)
-Sesame 1 tbsp (8g)
-Sesame oil 1tbsp (15ml)

Decades ago, we became friends with a Japanese chef and his family.
Invited to their home, he cooked Yakiniku for us.
It's not been easy to find on the interweb. My mouth is watering, just seeing it again.

Thank you so much for the video. You said it is ok without sake, can I put more water and mirin instead? I have imported halal mirin from Japan (no alcohol). There are so many delicious Japanese food but unfortunate mostly use sake. Of course there is no halal sake but there are many companies in Japan produce halal mirin. I heard grape juice can substitute sake but in Norway where I live it is almost no grape juice 😭. Any idea how to skip sake and find the substitute? Thank you.

If you skip sake, you can put water. Mirin makes it sweeter. So please do not use it to replace mirin 😉
If you cannot find sake (or Ryorishu = cooking sake), you don't have to worry too much.
It doesn't make super huge difference.

Looks delicious as always, might try it tomorrow, there's beef yakiniku cut at the fridge lol. Color and cooking time affects the flavor are things I'm taking notes of. That sauce looks good for other dishes too.

I had the time to cook this yesterday, and was pleasantly surprised by how good it tasted! I've made "Yakiniku" before, but the other recipes just tells you to marinate the Meat instead. I like your version better 😊

Been looking for a marinade like the one yakiniku like uses instead of a dipping sauce! Can this be used as one? Or do you have another to recommend? I tried buying one from don don donki but it wasn’t the taste I’m looking for

Would it be okay to not soak the kelp and use regular water?
Can i replace kelp with nori?
Since the sauce is heavily apple based, I'm wondering if similar results can be achieved by using a premade apple sauce as a substitute to honey and grated apple

But I think pre-made apple sauces are designed to go with western dishes.
So it might not match well with Japanese ingredients like soy sauce.
But I think it's worth to try anyway!!

Just replace with water if you can’t get it😃 Replace with Mirin will make it too sweet👀
