Katsuobushi is technically made from skipjack tuna but good luck finding it. There's a reason bonito flakes is the English term. I decided I wanted the real thing and the only way I could find it was as the unshaved "fish." It looked and felt like wood and had to be shaved using a tool that might as well have been a carpenter's plane. It tasted exactly like bonito flakes.
