@@atticratz6128 Yeah, we use it, we put it in the oil and take it out after one minute while making soffritto for pasta. That’s basically it with the exception of some strong meat based dishes.
Oh also we have pasta aglio e olio (garlic and oil) that has just fine diced garlic without the heart (green part inside), oil and spicy pepper

Work at a pizza place, guarantee you've eaten multiple pizzas that have repair holes on them. Trying not to put a hole in the dough while stretching it out is harder than it looks, its fucking annoying.
@@jacksonhetzman9873 Don't use dough older than ~6 days. The gluten relaxes over time and the dough loses its strength.
Before balling the dough, fold it in half twice and let it rest for half an hour, this builds more gluten.
You can also raise the gluten content by buying better flour. There may be one or two other ways to raise gluten levels. Dough with a strong gluten content is fantastic, you can sling it around however you want without worrying about tearing it

Brazilian here. So: it's a chicken, corn and cream cheese (a specific tipe of cream cheese called "Catupiry") pizza. It's really not the kind of pizza I like. That is "thrashy" pizza we have here, low end stuff. We have much better pizza places around.
That being said, I have eaten American pizza (not sure if NY pizza exactly, I know there are many differences even inside the US) and Brazilian pizza is completely different. Our dough is thin, while american pizza tends to be much thicker. Also, American pizza is primarily a cheese pizza with toppings, while our pizza is usually made with the "toppings" between the dough and the cheese, as it is done in the video (granted, usually it's done with proper cheese, not cream cheese).
Some doughs are thin others are fluffy and comes with catupiry inside, not all pizzarias in Brazil are like that, sure each one has a specialty.
Actually there's thin crust here, too. There's a variety of thiccness here.

Most Americans prefer thin pizza, it's just the takeout chains that use cheap garbage. Unless you are worried about toppings burning, like leafy vegetables, then you don't need to put the cheese on top. People like seeing the toppings, especially if arranged well

Me and my dad used to sell homemade pizzas and ill tell you that even though i dont know what ingredients he used for the pizza he was really efficient and fast at making one
Just so you know, the ingredients are - by order of appearence: pizza dough, tomato sauce ( cheap and not very concentrated by the looks of it), shredded chicken breast, catupiry cheese (a brazilian variety of creamy chesse ), canned corn ( a staple of brazilian junk food) amd THREE OLIVES!
It is cooked propperly, you won't get salmonela from it because the chicken breats is pre-cooked and these ovens burn very hot so the dough is probably even a bit crrunchy.
As you can see , this isn't a fancy place - that pizza should cost under 5 dollars.
This flavor of pizza is the favourite of many brazilians (not mine, tho), and can be made in nicer ways with better ingredients (more olives, no corn, a little bit less of cheese and chicken - but improving in quality).
Also, eating in cars isn't as popular in Brazil as it is in the U.S, most people will either order the pizza to be delivered at their homes or eat at the restaurant.

From Brazil here, the filling of this pizza is chicken, and the “cream” is a Brazilian cheese called catupiry, it’s quite good tasting. I will shed some light on everyone with doubts, I am Brazilian and this is my favorite pizza flavor, I will explain how this pizza was made, the first thing he put was tomato sauce with cream, in Brazil at least , it is common for some people to use sour cream to reduce the acidity of the tomato sauce, so it is half orange and not red, then he put chicken mixed with cheese, then he put the pasty form of a cheese created in Brazil in 1909 by a family of Italian immigrants, this cheese is called Catupiry, then he put the corn that is also an ingredient of this pizza flavor, then he put the pizza to cook in the wood oven and finally he put 3 olives that I didn't understand the sense, but he ended up making this pizza that is called "chicken pizza with catupiry", I hope I have cleared the doubts.
I think people are more outraged by him making it so terribly, and then uses carcinogenic fuel for the oven

This is NOT our reality, this video is from a VERY SPECIFIC place and does not represent our way of making pizza, there are tons of places where pizzas are made in beautiful ways, with different sauces and ingredients, i know that everybody (including me) laugh about this just because of the meme, but please, don't think this video represent all our reality.
Yeah, it’s been great going through the comments and seeing all the Brazilians who know what kind of pizza this was supposed to be being just as offended by it as Vinny. Apparently there’s an actual kind of pizza that has chicken and cream cheese on it that’s really good; this is not that pizza. People both for and against pineapple on pizza would look at this monstrosity with the same horrified look, because it seems like everyone can agree that this thing is gross. That said though this is like an overengineered chicken and cottage cheese (Brazilian type) pizza. If done properly they taste amazing but this is just a disaster 😂.

the white paste he put is named catupiry, its put in almost any salty food ever, it is the best thing ever and i would not live to this day without it.
As a Brazilian myself, I typically dislike our pizzas and lean more to traditional ones. I hate excessive toppings and I specially hate the inclusion of Catupiry on everything. But on this video, you are wrong on every level.
1) It is cooked properly! If you pay attention to the crust instead of the toppings you can see it.
2) There is nothing wrong with corn. Canned corn is precooked and ready for consumption and corn bacon pizza is a thing elsewhere, so yes, corn is a proper pizza topping.
3) It doesn't need a layer of cheese under the toppings to be a pizza! Just look at pizza base bianca. Or even the traditional Neapolitan Margheritta. It is just tomato sauce on top of the pie, with some slices of mozzarella on top.
4) Yes, it is a hand mess. But that is commonplace for brazilian pizza, as we often eat pizza with a knife and fork.
