    Hey, everybody used to be saying we want more homestead garden, fermenting & they gave us fermenting mead. They have to get the bees ready for winter. Mom could be in & needs a break also. Be kind & a little patient. He'll get er done. I'm just glad to see them.😁

      Did you know in Europe, some people expose their backside to bee hives, in HOPES of a sting? The bee venom is supposed to help arthritis pain. Other health issues. Lambs wool, un-cleaned, helps with it too. The oil in the wool. All kind of old world remedy's. Grated potatoes for severe burns. Scorpion sting.

      Bees take time. I only have 4-8 hives at any given time and it takes hours to harvest.

      Mead does not really taste very much like honey. It is very dry, will sometimes have very low carbonation, and has a "hot" alcohol bite.
      Young mead is very harsh and is nearly undrinkable. The statement by Dr. Leo about allowing it to completely ferment out for 10 - 15 years is a MUST !

    From one mead maker to another...Dr. Leo, you have my deepest respect! My father spent most of his life making wine as a professional wine maker in Germany and was even one of the pioneers of winemaking in Denmark. However, since Denmark isn't ideal for grapevine to say the least (that's changing now with the climate change), in the late 1990s he had switched to mead making. So I grew up with it, and have been making mead myself for 20 years now. I honestly did not think I would at this point learn anything new about it, but I have.
    I've heard long ago about raw honey having plenty of natural yeast in the polen, I established good relationship with a few local bee keepers and have tried the natural fermentation quite a few times, but eventually gave up on it as I never had success with it. Either the fermenting would stuck completely or could only go up to the beer level of ABV. It wasn't pleasant to taste...etc.
    And now I find out the polen needs to be fresh!
    I'll definitely try again, for my own personal pleasure, although I will continue using commercial yeast too as I need to turn batches every year, or even twice a year. The really cool thing with mead is so many possibilities for creativity even with commercial yeast. For one, there are so many different strains of yeast, so many different honey varietals, so many adjuncts to experiment with, and then on top of it all...even when using all the same ingredients and the same type of yeast, I've never had two batches that turned out the same. And no pressure for them to be the same, unlike in the wine industry where you need to blend with old batches because it Pinot Noir has to taste as Pinot Noir. I find that attitude suffocating.
    Anyhow, I apologize..did not want to go on for this long, but I share the passion so seeing this has triggered so many memories and thoughts in me.
    I'm so grateful to have gotten this video in my recommendations and for having the gut feeling I should watch it! Great stuff all around! 👍👍
    Btw, the russian pronunciation of med is similar to danish mjød, except our d sounds more like an h sound mixed with a d.
    Edit: When using auto siphon, you don't need to be pumping all the time. A few pushes will start the siphon and from then on out, gravity takes over.
    And the trick with the bottling wand is to press the valve down while you're pumping to start the initial flow. Once the entire tube and the wand are filled, which again should take a couple of pumps and a few seconds, then you can proceed normally from there; push it down for the liquid to flow, and lift it up in order for it to stop e.g. while you're moving onto the next bottle.

      7 years? You can get bees in the spring and have honey by June. Start up isn't to much for one hive. I just bought a cheap $20 suit and gloves of Amazon and built the box then ordered the frames (unassembled). I did buy my first set of bees but realized quickly that you can catch them for free and split the hive sometimes in the first summer but at least the following spring. Haven't paid for new bees since. Go for it!

      Mead does take many years to "mellow". The mead-maker must be very diligent to keep track of the dates of the bottled vintages (a label on each bottle is helpful).
      Mead-makers - in the beginning - tend to get too anxious to sample their product before it has had sufficient time to properly ferment out. Young mead is very harsh
      and will turn-off first time drinkers. I made mead back in the 90's and won some local home-brewer competitions but when Dr. Leo says "10 to 15 years"...that is not
      an exaggeration ! Over time, the mead will develop a gentle carbonation and have a very dry, not too sweet profile, with a noticeable "alcohol burn" when swallowed.

    There needs to be an Off-Grid School. Classes that teach, off-grid power generation and storage, alcohol making, gardening, water catchment and storage, etc... Homesteading is the future and more Americans need to be more like our Grandparents.

    Oh Oh DOUG I remember the TUBE us kids did the wine POTATOE WINE that Moma & Dad made we couldn't crawl up the basement steps we were only in grade school hahahaha !!! My Son makes wine of all different types in Northern WI. he has made some wonderful wines beautiful colors !!!

      Our first patch didn't make it either. Next time we did four different flavors and three of those made it. Blackberry was the best.

    You can see when the finished product was brought out for bottling that Dr. Lee started salivating this must really taste good love to try some but I would not be able to go through what you guys went through and since They can’t sell it I guess I’m out 😕 I found this gentleman to be very knowledgeable in this video to be very interesting thank you

    FYI- if you put half the water and shake it heck out of it. It will dissolve the honey. When you add the rest of the water just a little mixing.

      GMO crops are now everywhere. I am told all corn, soy, & even sunflowers in the US now contains GMO hybid genetics--because of bee created cross pollination

    Scott was so busy with fencing the new property and his 3 jobs he didn't have time to get the swamp box and hive we got from Dr. Leo at the conference. We hope to get it all done before spring.

      Doug told us that he will get around to it soon. In the meantime it’s harvesting and moving his mom in and tending bee hives before winter and all the daily homestead chores. We thermostat microwave electricity takeout lifestyle folks just crave entertainment and maybe need to be patient with our good friend Doug. He’s very generous and giving. Let’s return to him the same.
