One of my best friends passed away a few years back. He LOVED making this dish for his family. I always wanted to make it in his honor for my own family. THIS video says "it's time to honor your friend.." and this week, Scampi it is, for my lost longtime friend Steve. TY Chef Kent, great timing!

@@suejohnson3972 Thank you, you're very kind. He and I played in a band (me guitar, him keyboards) for 20 years and became like brothers. Many miles on the road, lots of laughs and sharing good and bad times. Left a big hole for me.

I am the furthest thing from a cowboy, but this man feels like home to me. Glad I found you guys this year!
This was one of our favorite dishes that our dearly departed Mom used to make regularly. She made it pretty much exactly like Kent made it here (including simmering the shells in wine) except she usually used fresh shrimp from the NC coast and I think she used whatever white wine she was drinking as that was her alcoholic beverage of choice. She had a couple glasses every evening while sitting on the deck with Dad (he had his couple of light beers) before coming in to cook the meal. She was one hell of a chef in the kitchen. We all thought she should open her own restaurant but she always said she got joy from cooking for friends and family and didn't want to lose that by trying to make it something more than that.
That's a lovely memory. Memories like that of loved ones are great things to cherish.

My Dad used to make Shrimp Scampi but would not share his recipe. He thought he'd live to 100 and would get around to sharing. Well, he made it to 90 which is still pretty darn great. He cooked up until the end from his wheel chair and with the prepping help of my Mom.
This recipe will bring back good memories from around his table. He loved to cook and bake, and would have loved watching your videos.

I’m a California kid that went to college in Albuquerque, New Mexico and having moved back home I miss all the green chile that was around. Luckily I can get a New Mexico brand of hatch green chile at Costco. Still get my green chile fix when I start jonesing! Having spent my time there I learned how to cook a lot of things with green chile. Beef, pork, seafood, stew, sauces. You can make just about anything with green chile! Thanks for another great video, Shan and Mr. Cowboy Kent Rollins! I love learning the finer points of cowboys cooking from you! Also, that’s some perfect looking shrimp!

Extended family all has it, including my beautiful sister in law Nat who has a very serious pre-existing health condition. Good people, hear ye, hear ye: I'm speaking the absolute TRUTH when I say, "if you ain't got you some of that Cowboy Kent Red River Ranch Original Seasoning then you DO NOT KNOW WHAT YOU ARE MISSING!!!" I used to buy it by the 14 oz plastic bottle, but i was going through it so fast I now order by the 3 lb bag!
