    Love sweet sticky rice with or without mangoes. Since I am Indian, I flavor the coconut milk with crushed cardamom and finally garnish with toasted sesame seeds. Yumm

    I love young coconut filled with cream brûlée and baked. I don’t know what the Thai custard is so I just use cream brûlée. It cooks into the coconut meat and makes such a lovely bite.

      Crying Tiger salad is a fabulous and easy dish made with steak and herbs with an amazing sauce, it's served with/over sticky rice. Thai curries both red/green are excellent with sticky rice. If you're adventurous you might try a recipe for Evil Jungle Prince, it's pretty easy to make and the flavors are addictive! Sticky rice goes great on the side with Thai seasoned wings and a spicy sauce. Just about any saucy Thai stir fry is good with this rice; the texture, aroma and taste when used in savory dishes grows on you very quickly, I serve it with almost all of my Thai dishes.

    1. Would a flat Chinese bamboo steamer work for the rice? 2. Did you say that non-iodized salt tastes saltier?

    • @tdublakeo
      @tdublakeo Před 3 lety +1

      I use an ordinary flat Chinese steamer over my wok or dutch oven basket to steam sticky/sweet rice, it works perfectly. If you happen to have whole cabbage leaves, use those to line the bottom, otherwise, just use a sheet of parchment paper and poke a dozen or so holes with a skewer. Spread your soaked rice over the entire bottom of the steamer, no more than 2-3" deep or it won't steam well. I know you're not supposed to bother it during steaming but I usually give it a stir/flip when I see the rice starting to cook. With a little practice you will master this method and your rice will be just right every time!

    Why do you have to make things so difficult. This is why a lot of people don't even attempt to make asian dishes. It took me a long time and a lot of effort to learn to make some of these dishes. Not to mention the many ingredients I had to buy that are not used in american cooking. I cook my sticky rice in the rice cooker... it will not win any awards but it is edible.

    • @tdublakeo
      @tdublakeo Před 3 lety

      Because doing things the right way is what makes it taste so good and have the proper texture. Glutinous rice has to be soaked then steamed over (not in) water. If you cook it in a regular rice cooker, it won't run out right. "edible" isn't the goal.
