Try using a small swivel and it helps to stop those wind knots. I find that without a swivel soft plastics twist the line up. Great video scotty...

I had a great hookup on a mullet head once land based by it spat it by the time I got to the rod. Some guys swear by fish heads and I don't disagree but the hookup conversion rate is the part Im not so sure about

We keep the undersized snapper alive in the live bait till we going cause throwing them over board is the absolute worst thing you can do

That's a small one down rocko way. Anything over 10kg is considered big. Small snapper are okay eating but the bigger ones are abit tuff.
