Black Sesame Loaf (Old Dough Method)

  • Salty, crispy and addictive. If you don’t like black sesame seeds, you don’t need to add them. Without black sesame seeds, it’s a basic hard loaf.
    Ingredients (making room temperature around 23°C, and dough temperature 24°C after kneading)
    Old dough
    100g all-purpose flour
    70g cold water
    2g fresh yeast
    2g salt
    Final dough
    168g old dough
    150g cold water
    2g malt extract
    158g strong flour
    58g all-purpose flour
    4g salt
    6g milk powder
    6g shortening
    4g fresh yeast
    15~20g black sesame seeds
