I need to pull out the soft white for this! What did you do differently for the batch at the end that was less spread out? I didn't notice a change in the printed recipe. Thanks for sharing all your fresh milled recipes!
I used less molasses. We made these several times, lol. The printable recipe is the updated version, when we did taste tests. If you want a cookie that spreads out more, you can increase the molasses, but it will taste more like a molasses cookie, than a ginger cookie. Decreasing the molasses let the ginger shine more! So yummy, just bake for less time, add a TBSP of brown sugar, and they should be nice and chewy! Happy Baking!

They are delicious! I did lower the sugar amount to 3/4 cups and will add another tsp of fresh ginger next time but they are disappearing really fast! Baked two x 8 cookies and the first one is crunchy and yummy, second is softer, that one is the one my husband prefers. I also froze 8 more raw cookie balls. Maybe it’s a stupid question but when I am ready to bake them, do I need to defrost them or bake from frozen?
I am so happy you enjoyed them! I just bake them from frozen, just add an extra minute or so.
