How to Make Cookies Using Freshly Milled Einkorn Flour using The Wonder Mill. Ancient Grain Cookies

- Brenda shows how to make two types of cookies using freshly-ground Einkorn flour....Chocolate Chip and Molasses. She shows how to use her Wonder Mill to grind the grain.
Recipe for Chocolate Chip Cookie
8 Tbsp. unsalted butter, softened
3/4 Cup brown sugar
1/2 tsp. fine sea salt
1/2 tsp. baking soda
1 large egg
1/2 tsp pure vanilla extract
1/2 Cup chocolate chips
2 1/2 cups whole grain Einkorn flour
Instructions.
1. Preheat oven to 350
2. Cream the butter, sugar, salt and baking soda well
3. Add egg and vanilla to creamed mixture
4. Mix in chocolate chips until well combined
5. Add flour and mix until fully incorporated
6. Drop by tablespoonfuls onto ungreased cookie sheet about 1 inch apart
7. Bake for 10 min.
8. Let the cookies cool for 5 minutes on the baking tray and then transfer to a cooking rack.
9. Cookies can be stored in an airtight container for up to 3 days.
Recipe for Helthier Whole Grain Molasses Cookies
2/3 Cup oliv oil. (extra light)
1 cup sugar
1/4 cup molasses
1 large egg
2 cups Einkorn flour
2 tsp. baking soda
1 1/2 tsp. ground cinnamon
1 tsp. ground ginger
1/2 tsp. ground cloves
1/4 tsp. ground nutmeg
1/2 tsp. sea salt
cane sugar for rolling
Instructions
1. Preheat oven to 350
2. In large bowl, add the oil, sugar, egg and molasses and beat until combined. Add the flour, baking soda, salt, cinnamon, ginger, cloves and nutmeg and stir until combined.
3. Roll the batter into 1-inch balls and then roll the balls in cane sugar. Place the balls on a lined cookie sheet spaced two inches apart.
4. Bake the cookies for 8-10 minutes until the cookies are cracking on top and a little darker around the edges.

Haha....no, we're not on our best behavior. After 43 years of marriage, we've really learned how to treat each other in a way that is best for them. My husbands work transferred us across the country. Where we lived before we could easily find whole grain berries and grain mills to buy. It was not easy where we are now living but we did find a store called Bread Beckers out here in Georgia. The WonderMill is their favorite mill to use. They have been using it for many years. The owners Brad and Sue Becker told me that less than 1% of the WonderMills ever have a problem. The motor in them is wonderful and you could grind all day and it wouldn’t be overloaded. I was leaning towards a stone mill but found out that in the east there are tons of bugs and the oil in the grains as the wheat is ground sticks to stones and attracts bugs getting up into the mills. Brad used to clean out the mill bugs out if his mothers stone mill all the time. You would have to us3 your mill pretty much daily to keep that from being a problem. The WonderMill has metal parts in the so the oils won’t stick to the metal discs and the bugs won’t be getting into this type of mill. Had mine for over a year now and not one problem with bugs being attracted to it
Wow, I had never thought about bugs. I know I'm very happy with mill so far. We haven't ground as much grain during the summer months, but as the cooler weather comes I'll be doing a lot more baking....I can't wait!!!

It must’ve a Pennsylvania thing when we lived in Arizona no one ever did it, but my granddad and my sisters and I love frozen chocolate chip cookies, I still freeze a few when baking

I don't do a lot of baking in the summertime... just my weekly or semi-weekly sourdough bread. But I will definitely be trying your cookies in the future! I do grind my whole wheat flour, but I still need to try einkorn. These cookies are a good incentive for me to get going on that! Love it...Marie

I have only been milling for a month and have the Wondermill as well! I love it! I always use Einkorn for my brownies and chocolate chip cookies, but it wasn't fresh milled. I am converting them with fresh milled wheat berries too. What recipe do you have for the pasta? I just ordered Einkorn berries and would like to make pasta. I did it what all purpose Einkorn, but not fresh milled. I would love to try your recipe. Thank you for a great video! I have Carla's Einkorn book😊
I haven't made the pasta yet using Einkhorn. I've been buying Jovial Einkorn Pasta through Azure Standard. I'm hoping to get into pasta making soon, but just haven't had the time to really try it yet.
Just found your channel and REALLY enjoying it. You mentioned bread from fresh ground grains. RoseRedHomestead bakes bread on her channel using both King Arther flour but also grinds her own flour for bread baking. If you haven’t seen her yet I think you would really enjoy her.

Do you ever sift your flour to get All purpose flour or just use it how it comes out of the grinder?

I've always just used it as it comes out of the grinder. The grinder has three settings. When it's done on the 'fine' setting I don't know that I could even sift it. I'll have to experiment, I guess. 🙂

Is the wondermill a stone grinder or is it a metal grinder? I read the metal grinders create more heat that can evaporate the oil in the germ.
The Wondermill does use metal, but the amount of heat is extremely minimal. I can't imagine it would be enough heat to evaporate any oil. ??
Can you do Sugar cookies with Einkorn?!
Yes, I would recommend looing up a recipe specifically for Einkorn flour. (just to be safe)
What are you using to mix together the molasses cookies? It looks kinda of like a whisk but different
Hi. It's a flat whisk. Batter doesn't get as clumped up at it does with a traditional round whisk. I use it more often than any other whisk

It's great that your using a low glycemic flour, just let your viewers know that adding sugar defeats the purpose of using a healthy, more expensive brand.

Just made einkorn snickerdoodles. They came out crap.
I haven't tried Snickerdoodles yet. Did you use a recipe that called for Einkorn? It does seem to be somewhat different than regular white flour.
