Palestinian Veggie Maqloubeh | Sahtein!

- PLEASE READ FIRST: If you are vegetarian, use a vegetable broth when you make this. I used chicken broth just because it was what I had in the kitchen on this day. This is a method for a maqloubeh with a base of vegetables. If you are vegan or vegetarian you'll use vegetable broth or mushroom broth and it will be delicious and nutritious! (do I really need to tell you that though?)
Hello! I know it's been a while. Here is how I make Maqloubeh- a delicious, healthy comfort food to be shared with family and friends. Maqloubeh traditionally is made with chicken or lamb, but today, I chose to make one using just vegetables.
Ingredients used:
1 eggplant
1 cauliflower
2 grey squash
1 can chickpeas
1 onion
Bunch of parsely
1 potato
2 tomatoes
1 cup basmati rice
plain yogurt
chicken stock (use veggie stock if you wish!)
pine nuts
pinch of saffron

I’ve actually eaten Maqlouben made by Palestinian person living near the gates of Al Aqsa. Her door wasn’t wasn’t big enough to get the pan out of the kitchen. But it was amazing 😀

A dear friend of mine who’s Palestinian brought this with her to lunch one day and let me have some. Whenever I go back home she has me over for dinner and makes this. Usually it has lamb or chicken. One of the many ways she makes me feel loved. Thank you for this, it looks absolutely delicious. I will try making this ASAP.

Hi , I was introduced to Arabic food thru a Palestinian coworker and really enjoy it. This is going to be my 3rd try in making this dish. My mistake in the past was incorporating too many ingredients- tomato potato carrots eggplant cauliflower and chicken . After layering the ingredients and placing the rice on top and adding broth to cover the rice, I’ve found that I have to keep cooking to where the water is evaporated or absorbed. This makes for soggy but still delicious dish. This time maybe I’ll use less ingredients or just cook the chicken separately and combine it when flipping the pot. Thanks for your videos- subscribed.

will try this. i am sure tastes excellent. more garlic the better. I have made adhoc mixed vegetable rice, with not as many vegetables. I find it amazing, all countries have similar food, just a few basic changes to the process gives the food its uniqueness. I believe Spanish rice is also layered, its been a while I ate that. some biryanis are also layered. I watched an Indian dude teaching Ramsay, with 2 or 3 layers of different meats in the rice.

For interests sake the principle of layering and cooking in one cast iron pot is an old South African tradition as well, dating back to the early settlers. They called it potjiekos, or literally "Pot Food". Of course, no pine nuts or 7 Spice to be had back then. Also the pot is not tipped over, just very carefully ladled out to make sure everyone gets all the layers. It is absolute sacrilege to stir your "potjie" and break up the layers, punishable by immediate excommunication. I will definitely make up my own Middle Eastern 7 Spice mix. Great Tip!
