How to make Palestinian Seven Spice (Grandma Approved)

- Alright y'all, this is a moment you've been waiting for, my most highly requested recipe of the moment -- My Sitto's seven spice that I use in countless dishes on this channel! I messaged my Sitto to confirm the ratios for this recipe. She will make a huge batch of it and send it to all of us to use throughout the year - I've gotten to make it alongside her a few times.
As I've said before, the iconic seven spice mixes will differ from region to region and even between households. This is how my Sitto makes hers. We're not about gatekeeping the magic here, so I humbly offer you this ratio of spices that remind me the most of home.
(special arm appearance from Mama who did not want to be on camera on this day but was there the whole time for moral support, she's a real one)
Spices used:
Black pepper pods
Cinnamon (ground)
Allspice
Cardamom (roasted) (ground)
Cumin
Cloves
Nutmeg pods

I made a scaled-down, mostly pre-ground version just to try it out, where 1tsp = 1cup from your recipe. I just estimated for ground clove and nutmeg. It’s so so so good! I used it in your basic freekeh soup recipe. When I stirred it in, the combined scent with the onions just made me crave kibbeh immediately.
Once I buy more allspice berries I’ll be able the make seven spice with whole spices properly. Even if I’m pounding it with the mortar and pestle for a while, it’ll be worth it. 💪🏾 Thank you so much for showing us this recipe.

Personally I would grind the spices individually as you did - some spices will grind quicker than others. This way its easier to maintain consistency. Great to see you back. Hugs from Melbourne

Thank you for the great video! Interesting about the cardamon - I'd read that it appeared in Palestinian and Jordanian versions of the mixture. I've used a recipe for many years now from a Lebanese friend's mother that is a bit different: 1 tablespoon each of black pepper, allspice and cinnamon; 1 teaspoon each of cloves, coriander, nutmeg and ground ginger. I'll try this version too. Love the channel, by the way. Peace and love from England. :)

Thanks so much! Can you provide all the measurements except cloves in grams before grinding/grating? This would be a huge help. I am searching online for peppercorns in grams and it's saying 120g; not sure if that's accurate for Sittik's recipe. Is the 1/4 Cup green cardamom with the pods? Grams is a more precise way to measure and given that ratios matter here, it would be great to see! ❤As you aren't using the measurements given, am also not sure! 🎉🎉❤. Shukron❤🤩🙏🏼.

Hooray, I can not wait to make this new spice for me. I am going to have to order some ingredients from online but then I am ready to give my dishes the flavor upgrade they all deserve. There are so many recipes I want to substitute my old boring over used spice blends and herbs for this new spice mix. What is really cool is the ingredients are hardly used in my cooking. This will really expand many new meals for my weekly meal plans. Thank You, Thank You for sharing this with us. You are my Hero. I am glad you said take out the cardamom seeds and not to grind the whole pods. I think this is the only recipe on the net that tells us to crack open the pods and only grind up the seeds. Very big tip. When you checked out the aroma from your fresh batch of spice, to the one your grandma made, I laughed out loud. That is something I would so do, then I would taste it, just to be sure.
