Macaroni with Garlic yogurt sauce | Sahtein!

    This dish is a comforting Levantine classic: macaroni with a garlicky yogurt sauce topped with seven-spiced ground protein (beyond beef used on this day)! A much loved favorite in so many Arab households and a crowd pleaser for sure. Happy holidays and do let me know if you make this, I'd love to hear what you thought!

    Ingredients used:
    Macaroni (any pasta you like)
    Yogurt (regular full fat greek/cow's milk)
    Garlic (and plenty of it)
    Onion
    Plant based ground protein (beyond beef. use ground lamb or beef if you prefer)
    Seven spice mix
    Cumin (whole pods ground - always best to grind them fresh if you can)
    Black pepper
    Pine nuts
    Parsely

    Had this for the first time (but without the meat) when I visited my cousins in Ramallah. One of the quickest, easiest Palestinian recipes to make but so delicious. My cousin-in law also put black pepper and ground cardamom. And yes, lots of garlic is essential for this dish. 😋😍🙏

    I tried this today with my own spin on it and I was very hesitant to use yogurt as a sauce because it just did not fit into my head (not very common in my culture) but IT WAS SO GOOD, this is one of the best things I have ever eaten and that yogurt sauce is amazing, I am definately making this a weekly dish.

    My dad is from Jordan, and we ate this all the time growing up! but we always had it over rice with that yogurt on top. Yum!

    Wow!!! Love that garlicky sauce. For my meat substitute I used diced mushrooms with a bit of tomato paste in addition to the onions and spice blend. Worked out great with the spinach and the lovely sauce and pasta.

    made a huge batch of this recipe the other day, it was so easy to follow and so delicious! it held up wonderfully in the fridge and tastes great served cold too; the chilled yogurt sauce gets gets creamy and thick and it almost feels like a much healthier alfredo! your channel is definitely revolutionizing my conception of all the savory/spicy/hearty/comfy things you can do with yogurt in general, haha. thanks so much for the illuminating recipes and FREE PALESTINE!!!!!!

    try it but brown the garlic until it is fragrant and then add to the yogurt, definitely an upgrade. if I am really in the mood for more garlic I will still had a couple cloves raw to the yogurt as well to give it more depth.

    Thank You, Nadia. As a vegan and Lebanese I’ve spent many years adapting the traditional recipes but have never seen this. I only wish non-dairy yoghurt was a bit better.

      Have you tried Oatly Greek style? I've used it a few times in cooking and it compares really well.... and if I am feeling fat I just eat it straight!

    Wonderful ! I added capers, a chopped walnut, little pieces of cooked zucchini crushed etc. within the (soja) yogourt before mixing with the noodles, and a little feta mixed at the end was perfect. Thanks for that delicious idea !

    So good. I made this last night as presented (except I didn’t have spinach) and my hardworking, meat eating husband went crazy. Meaty, gorgeously spiced, creamy and crumbly, crunchy and garlicky- what else do you need? Used a good orecchiette. Served with a simple salad of chopped romaine and Persian cucumbers, lemon juice, olive oil, salt. His ultimate compliment, “Can we have this again?”, puts it in the rotation.

      @@NadiaGilbert ah, actually it was Alpro no sugar quark which, to me is more close to middle eastern yogurt that I was used to :)

    You are like a cozy friend one would like to have. Love your food and video aesthetic. Also: I'm excited about making a yoghurt sauce for pasta. I could have never imagined it being possible on my own given how pasta is sold in the mainstream as a predominately Italian food. I'm really glad to have found your channel. And, I just learnt why you are calling this "Macaroni" although you are using different shapes of pasta. But now I know, now I know!
