    I really appreciate that you mention all the details about owning a bakery, even the not so sexy ones like pricing and distribution.
    Watching your videos inspired me to start selling my loaves, I've been baking out of pleasure for almost a year and I just realized it's time to let others enjoy it and make a profit along the way.
    I'm in northern Mexico where sourdough is nearly unheard of, so I'm trying to bring the good word of traditional bread over here, thank you John, you, your family and your company have really inspired and taught me a lot.
    I hope everything turns out well with that situation about moving the bakery out, if I was near I'd be a constant consumer of your products.

    I drove 80 miles to closest artisan bakery today! Great sour dough loaf, pastry, and amazing cup of coffee. $8.00 for a loaf ,

    I appreciate your great tips on costing relative to value when it comes to doing and meaning business.
    Thanks for the educational videos. They are very inspirational to anyone having passion for establishing and running a bakery business or any other business feasibly and viably for a profit.

    Those whole grain flour prices are crazy! At my local mill in the Netherlands a 25kg bag of whole grain flour costs approximately $27,50 and organic whole wheat flour costs about $33. Spelt prices are about double that.

      I was about to write about the same thing...lol, so i gave your comment a thumbs up instead.
      Here in Germany a Kilo of white flour is 60 Cent, whole grain flour goes for about 1,20 $ and if you go for organic it's about 1,50 $ even in small quantities.

      @@TheElrondo Since I live near the German border (near Kleve, Emmerich and Elten) a lot of Germans come to buy flour here, especially when they go on holiday in the Netherlands. :)

      Germany passed laws centuries ago that encouraged breweries with higher margins to use barley as opposed to wheat, keeping the relative cost of flour for the low margin baked sustainable for lower priced bread. Our main supply constraint for grains in competition from brewers, who have less issue paying a premium due to better overall margins.

      Typically in German Beer is no wheat, mostly barley is used.
      With wheat they brew special wheat beer wich is mostly consumend in southern Germany, wich is a top fermented beer.
      Barley brew is bottom fermented.
      In Germany rey is very common for baking bread mostly a mix of wheat and rey. In the last years spelt got very popular in bread, used in a mix or up to 100%.
      The last couple years i make my dough with 60% rey, 20% wheat and 20% spelt, all whole grain, and sour dough based on rey.
      Sadly lot's of little traditional bakerys had to close because they can't compete with the price of the super markets, selling cheap prebaked, frozen breads and rolls.
      Industrial crap food, nobody knows what it's made of.

    Hit up your local print shop for some signage that can be applied to the back of those shelves. Great opportunity for brand awareness and call to action. :)

    A day off,...Or maybe thinking of it as a day away, is healthy, you are both parents, you are a family.
    It was one of the reasons why you both work so hard.
    I would pitch outside......Closer to the large car park/ closer to your customer.....They see you first in the queue, and you are not lost in the crowd. I am British, so l maybe wide of the mark here as l am just a veiwer, but a Dyson Airblade powered via solar, would ease the heat for your helpers, it runs at 15W.

    Question - When I come to buy bread (from Vegas), do I need to come to a farmer's market or do you also sell right out of your bakery. If farmer's market, what is your schedule please?

      Most Sundays you can pre-order to a farmers market or delivery depending on if you stay in a house here is the website proofbread.com/

    5:22 Perfect summary of our country right now. We have you, a responsible business owner wearing your mask (along with your employees), and choosing to be outdoors when possible, frankly because you care about your employees, your community and your customers. Then we have these other people walking right by you (inches) with not a care in the world.

    I don't really think 4 hours is that bad. I know that some loaves I've baked actually have better-eating quality later.
    In fact, some breads that I make even taste better a couple of DAYS later. So it really depends on what you are expecting from your bread.
