Proof Bread is a modern throwback to a way of life that values small-scale craftsmanship, local community, and creativity.
We are a team of passionate bakers working in a historic building in downtown Mesa that has been converted into a retail bakery.
Everything we bake is long-fermented with our sourdough starter ‘Harriet’. Each product is artisan, crafted by hand, from the best local ingredients, with no shortcuts.
We bake in line with 13,000 years of human history, avoiding artificial processes and unnecessary ingredients. Honoring tradition and serving better bread for our community.

    That's genuinely exciting. Kudos to you. I take it if you didn't commit to buying in advance the farmer would likely grow another, more conventional and readily saleable variety. Curious what proportion of your basic sourdough loaf is flour cost and how it compares to labor costs?

    I've seen similar encroachment on agriculture in Utah. The Wasatch Front is where the bulk of Utahns live and used to be very agriculture heavy, but with the massive population growth over the last few decades, most farms have been pushed out to the fringes, out to other valleys, or altogether out of the state. Orem used to have orchards everywhere; now, there's only a couple, as it's now covered in housing.

    I live in Yuma. The fields out here are full of wheat. It’s almost ready to harvest. During the summer transition there is also Sorghum, cotton and melons. I’m glad you’re doing what you’re doing👏🏻👏🏻Thanks for sharing.

    Just a question... Are you growing Rouge de Bordeaux exclusively, or will you be growing other varieties, and if so, which ones? Second, will you be offering wheat berries for sale to your customers for their own milling and baking?

      This year we have contracted for Rouge de Bordeaux, but we will still be purchasing other grains to mill, use and bake. At the moment we are interested in selling our own flour and flour blends but we may choose to sell some grains as well. We hope this will be an interesting path towards connecting with our more distant audience.

    Regarding whole grain.. In many societies there seems to be a tradition of a golden middle way. For example half brown/hand pounded rice, bulgur, couscous, groats, etc. The grain is pounded/polished only so much that the very outer rough layer is removed and the nutritious layers beneath are kept. In some traditional health systems like Ayurveda the outer layer is considered hard to digest and in my experience many people also have difficulties to digest whole grain and also don't enjoy the taste. Maybe also because it contains anti nutrients like phytic acid (which luckily get removed by good fermentation of a bread dough).

      Also most traditional European bread is not whole grain but made of "1150" or "800" flour which seems to be in that golden middle range.

      It is possible to make delicious 100 percent whole grain bread. Sourdough, very high hydration. Not widely available though so a lot of people only think of dry, hard breads (with sweeteners added to try to compensate for the poor quality) when it comes to whole grain.

    No till is not organic or 'older' as far as I know? It demands the use of glyphosate and the 'older' at least European farming methods include tilling. No till is still better than conventional farming that uses greater amounts of herbicides, pesticides etc and also disrupts the soil biology... Still let's keep it real and not over glorify it ;)

      I’d say this is a loaded topic. First, this field is never sprayed with glyphosate. This was a foundational thing for us in our arrangement. Another point worth discussion is that this field like many others in the area are on borrowed time. This whole area is rapidly urbanizing. My understanding is that a local farmer leases certain fields for certain periods, and the landowners are not the ones farming, rather they are likely actively positioning the land for development. I imagine this has a lot to do with the lack of an ability to even seek an organic certification.

It would be interesting to know which substances they use because as far as I heard until now it's common practice that no tillers indeed use a substance like glyphosate whereas organic farmers are tilling and are using only organic substances.

      @@ProofBread I agree that the organic certificate is not the important thing, more so the practices being used. Still I wouldn't use the word 'organic' if it isn't holding up to those standards. sometimes as you said the only difference between organic and non organic are the bureaucratic hurdles that are not worth overcoming. Other times it is also a difference in substances being used and I think it's important to be specific about that and know more about what is exactly going on before loosely labeling it organic. I think in the latter case regenerative, natural, gentle or something like that would be the better terms and closer to the truth.

      Due to the nature of the farming in the area it doesn’t make any sense for the farmers. This plot like others is temporarily being used for farming pending development in a large urbanization district. However, it is grown glyphosate free, not with conventional farming principles.

    40 acres x 50 bushels per acre x 60 pounds of whole wheat flour per bushel = 60 tons or 80 pallets of flour. Obviously yield will change based on harvest.
