Proof Bread is a modern throwback to a way of life that values small-scale craftsmanship, local community, and creativity.
We are a team of passionate bakers working in a historic building in downtown Mesa that has been converted into a retail bakery.
Everything we bake is long-fermented with our sourdough starter ‘Harriet’. Each product is artisan, crafted by hand, from the best local ingredients, with no shortcuts.
We bake in line with 13,000 years of human history, avoiding artificial processes and unnecessary ingredients. Honoring tradition and serving better bread for our community.

I was a baker on the USS Nimitz when I was stationed in the early '90s, started my day at 3:00 a.m. first thing I had to make was 30,000 dinner rolls. Just saw you guys for the first time on CZcams I would love to work with you guys I think I'd be a blast. Sure wish I lived closer

I make dark choc chunk sourdough and I convert everyone who thinks it is weird. Highly recommend! Croissants are too sweet, this makes killer toast
I am truly fascinated and impressed with all the you guys have achieved. I have just recently started baking sourdough bread at home. I wish I could be a part of your team but unfortunately I live in Illinois. My question is, do you know of any similar kind of a bakery located in north western suburbs of Illinois?
Bread needs to be placed vertically, immediately out of the oven so that it is allowed to the “ressuage” and its crust doesn’t become mushy.
While some bakers do this, many do not. So long as the bread is placed on a somewhat breathable surface we have not found this to be an issue. I agree in instances where the bread is placed flat on a tabletop.
Great video, but… don’t wear flip flops in the bakery. If she slips and gets hurt OMG.
They’re especially bad on concrete floors as they provide zero cushening from the stiffness of the floor.
I assure you she is wearing non slip boots 99% of the time
