Hi! Yes, for surwa, you could add maybe 1/4-1/2 cup of hot water maybe 2-3 mins before you stop cooking. Let it boil and then it should be done. I like it with aloo when I make it with surwa 😜

I didn't pound my ginger enough, and I think it made a sort of burnt bitter note as a result which kind of fought with the cilantro, but it was still incredibly edible! Next time, I'll use truly pasted ginger. I had mine over tofu noodles, and my girlfriend and parents had theirs over rice. Cucumbers from the garden as a side. Oh, and I also pounded a handful of Thai chiles into the ginger and garlic, so it actually had some spice to it! I'll post pictures on facebook.

You can add it at any stage. I added mine right after adding the shrimp into the pan :)
