    In this video, I'm going to share with you a recipe for the healthiest cookies in the world. These are keto-friendly cookies. They don't have sugar or flour. You're going to love them.
    The recipe for the healthiest cookies in the world:
    Ingredients
    8 ounces (2 sticks) of butter (Organic -- or my favorite; Kerrygold Irish Butter)
    4 Tbs. of xylitol (sweetener) (get on amazon.com or at the health food store)
    2 cups of almond flour
    2 cups of crushed pecans
    1 chocolate bar (3.5 ounces) -- must be diabetic chocolate (I like Simply Lite® -- from Trader Joes)
    1 pinch of sea salt
    2 tsp. of vanilla extract
    Where to get:
    Kerrygold butter: most grocery stores, but Trader Joes, BJs, and health food stores have it. But any European butter or organic butter will work.
    Almond Flour: most health food stores or on amazon.com
    Pecans: you can find them at any grocery store, but on amazon.com they are less expensive.
    Xylitol: you can find it at the health food store or amazon.com
    Simply Lite Chocolate: Trader Joes or online.
    Directions:
    Preheat oven at 325.
    Leave butter out of the refrigerator overnight -- must be soft.
    Mix the butter (8 ounces) with the xylitol (4 Tbs) with a mixer (or by hand) until very smooth. For time sake, mix with fork until a smooth consistency.
    Crush the pecans (in grinder, food processor or in a bag with a rolling pin). Make sure it's 2 cups after crushing.
    Breakdown (or grind) the chocolate bar (3.5 ounces) in a food processor or other means.
    Mix thoroughly the now sweetened butter, almond flour (2 cups), crushed pecans (2 cups), crushed chocolate bar, pinch of sea salt, 2 Tsp of vanilla extract in a bowl. You could, as an option, have your food processor mix it instead.
    Form little balls with your hands and roll them in some almond flour (to coat them), putting them on a cookie sheet with parchment paper.
    Cook for 13 minutes at 325 degrees, then let them sit out of the oven for 10 minutes. Transfer to the freezer until frozen. Then store them in the refrigerator.
    Enjoy!!!!!!!!
    Mistakes:
    1. Let them completely cool down or they will crumble and disintegrate when you try to pick one up. I also put them in the freezer, make them solid and we're good to go. Consuming them cold and slightly frozen is much tastier than consuming them warm.
    2. I also found that using the "no sugar added" diabetic chocolate works better with milk chocolate, not dark chocolate.
    3. Almond flour works better than almond meal.
    4. I also found that if you substitute crushed pecans with crushed macadamia nuts or crushed cashews (same amounts), it will add a different flavor, be very rich, and also crazy delicious. If you do this, make sure you do not add that pinch of salt, because macadamia nuts and cashews may already come with salt.
    5. Using vanilla extract.
    6. Leave the butter out of the refrigerator overnight.

    I don't know what I appreciate more...Dr. Berg's educational videos, recipes, wife, or quirky splashes of humor!! Everything in moderation. But I don't think there is such a thing as too much Dr. Berg!

    I don't understand all the negative comments regarding Dr. Berg's use of butter and eggs in his cooking/recipe videos. Unless you are a strict vegan or intolerant, then you should just move along to another video. My great-grandmother lived to be in her late 90s and my grandfather is now in his late 80s. My maternal grandmother is now 78 and is in perfect health...and they all ate butter and eggs. Why is it that so many Americans have such a negative view of these things when it is obvious that there is no detriment in regards to health and longevity? Just a question..not intending to be rude.
    The Average lifespan for an American I believe is 74...The average lifespan of most doctors is 56 (unless that has changed) yet they promote and recommend using margarine, hydrogenated and partially-hydrogenated vegetable oils for cooking, and claim they are heart-healthy, etc... and to "watch your cholesterol" by not consuming those evil eggs and butter! How has this improved the overall heart disease, diabetes, obesity epidemic that is very obviously growing and not getting better? I don't see any! Perhaps everyone needs to take a step back and really weigh the evidence here and don't let false information that has been propagated to the masses as truth for too long, get in the way of you being well and living to a be a hundred. Just my opinion.

      Fat to be used in moderation. It's not the main fuel source. Carbs are. Carbs which mix with water. Drop some fat in a glass of water and look at the mess it causes. Water and fat don't mix well.

      Well I just want to say that you are making several assumptions that are wrong.
      If I know someone who is 100 years and never ate butter or eggs, does that mean nobody should eat them? No.
      You need double blind double studies with a good size and varied sample to be able to say how a certain diet or food affects lifespan.
      Second, the fact that someone tells the general public that something is unhealthy does not necessarily correlate with people not consuming it. Like for example cigarettes or drugs or alcohol. People know and still consume.

      OF COURSE YOU NEED TO CONSUME EGGS THEY'RE HEALTHY. Butter I think in moderation like not get a chalk of butter or something lol. If you know Joanna she has a channel on youtube she recommends a thumb if it a day. She did not say to eliminate though so BUTTER IS FINE lol.

    If you happen to be lactose intolerant, then substitute it - you don't need permission. And fyi, butter isn't toxic. It's healthier than the overabundance of 'soybean ' byproducts in America 's foods.

    I just made 1/2 this recipe + 2tlbs almond flour, I used swerve , and walnuts, no chocolate. it took double the time to bake. it came out really tasty. . I would make it again. Thank you again and again Dr. Berg. God bless you and yours in this holiday season🙏

    Just like all of Dr. Berg's recipes...AMAZING! My family are finicky eaters and they love these. I didn't tell the boys they are healthy cookies. I use a melon baller to scoop the dough and make bite size cookies. Yummie! Thanks again, Dr. Berg!

    absolutely fabulous! my new favorite cookie. i've made a couple substitutions that i think are ok...instead of xylitol, i use erythritol...and i decided to try hazelnut flour in place of almond flour. any thoughts, Dr. Berg? yum!

    It is amazing to me that there are so many people unaware of there diets... I say that these are very healthy cookies based on my research and use of the glycemic meter... They might be dangerous to those that take in sugar or simple carbs, but for those that have spent any time cooking with out enriched flour or simple carbs.... (sugar) Know that these are very healthy!! Thank you for sharing your recipes Dr. Berg!! ;-) Please keep up the great work!!

    Eat xylitol with care. Despite that it is a healthy sweetener, it can cause some digestive issues (ie. diarrhea). Sorry if that's TMI for some people, but believe me you don't want to be eating handfuls of these at work and find out THEN that you are sensitive to xylitol.

      Aura Gael yeah it is smart to start small, I personally have a huge tolerance and, before I was really dedicated to health, went through 3 cups of the stuff in 5 days, didn't have any issues, my brother however, is very sensitive.

    Guess I'll have to buy the book to get this recipe! I've never seen such a fast recipe in my life! LOL...makes Julia Child's old cooking classes look like they were done in slow motion! These remind me of cookies I make for Christmas, minus the rum, a recipe I'll have to rehaul into a much healthier state come the end of this year!     What does xylitol matabolize into? Could erythritol be used instead and what does it matabolize into. Do either of them cause constipation or bowel movement problems. Stay away from maltitol sweetened products. It makes things sticky as glue down there. I guess if you can keep yourself from eating more than one little cookie a day, and only on special occassions it doesn't matter much what any of them do.

      Xylitol is actually not good for Adrenal Body Types like myself, Stevia is actually a better choice.

      +James Chuaycham Organic grass fed Butter or Ghee, coconut oil but coconut oil shouldn't be used in high heat cooking so only butter is best.

      ***** I'm sorry, your question came in as the stevia.
      I would follow that link and see the reviews on amazon. I have a bag of that stuff, it taste like sugar, it seems to turn into fiber while in your mouth. I would try to find one that wasn't made in china. The bag I received said made in china, I was mad about that. I haven't even used it yet because of that. I should have sent it back. From what I read on amazon, it will not cause stomach problems.
      It gets a good rating on amazon. I bet you could find links here on you tube. I might make some oatmeal cookies with it, with walnuts and raisins, yummy.

    Are we supposed to figure out what the ingredients are (other than butter)? That granulated white stuff .... if it it not sugar...what is it? Vanilla? Where is the recipe?

      for sure, it's old propoganda, I'm sure some people are sensitive, but it's rare. LDL is made by our liver and doesn't really correlate with dietary intake, interesting stuff.

    I made this and I got a pool of butter in the oven . I did exactly as told .
