    This has been the most that resembles a non keto cheesecake. It came out fantastic, my whole family could not stop eating it. I cant wait to try your other recipes.

    Hey I got the erythritol you recommended and made this last night. I halved all your ingredients (except for lemon juice and vanilla extract), skipped the crust (less calories) and made them into mini cheesecakes using a muffin pan, the batter yields about 8. I just had one for breakfast, it's absolutely delicious. and this is coming from a person who only eats cheesecake Lol. THANK YOU! and for those who wanna try making the mini ones, you only need to bake for about 15 minutes @ 320F, you don't need a water bath for this and then chill in the fridge overnight.

    If you haven't yet, please consider doing a low carb keto cereal recipe, my husband is dying to eat cereal, but I haven't found a good recipe out there that doesn't get mushy instantly.

    Got my 6" baking pans from Amazon, and I'm digging into your beautiful recipes. Castella cake was very light; so unlike keto baking I've tried before. I'm committed to following this cheesecake recipe right down to the letter, but not sure I can wait overnight for it to set. Thanks!

    I just tried this recipe, are you sure the amount of cream cheese used is correct? Because I used 2 bricks of cream cheese, which equals 16 oz, but it came out way too much for a 6 inch pan. Thanks

      Hello Emily! You can definitely freeze your cheesecake. Wrap it well in plastic wrap, then foil. Freeze for up to 1 month. Thaw in the fridge, or on the counter before serving.❤️

    The only sweetener i use is, Splenda in the little packets, and I tried baking with Swerve or Stevia, which was nasty!! ugh ....Can i use Splenda? or no?

      You should try Monk Fruit sweetener. Even if mixed with erythritol, it is so like sugar.
