    I love that you are so unashamed about not being a super tidy person.
    It makes me feel so much better. There is always pressure to have a nice put together house and I don’t, I prioritize meals and my kids hearts.

    🤣 That was me! A good salt water soak will pull those little hidden buggers out. They dig in so deep they can be invisible!! I think the boiling water just cooks them in place … but hey! If you don’t mind, it don’t matter 🤣🤣🤣

    I have oranges tangerines and lemons. I juice and freeze, eat fresh, share, and make marmalade. Also orange ice cream. Orange peel candy is fun, but a lot of time. Use peels for cleaners, scrubs, and some compost. Citrus marinade, and salad dressings.

    Love the honesty on how to use the food processor!! I did the same thing after getting my processor. After awhile my teenage boys helped me figure out I put it together wrong. 😂 Your video made me laugh because I’ve been there and done that too!!

    Jill I do caulirice but I just put it into the foodprocessor than put it in bags than freeze it. Do not blanch it before. So far so good working. When I coock it just put it on ricebrand oil and fry it and it is done. Yummy. I do keep in bigger pieces cauli for soup than I blanch it and put it in ziplock bags than freeze it.

    Cauliflower Steak might be a fun idea for you too. Same process of blanch, vacuum seal, freeze. Then season and use your cast iron skillet/oven to get a nice sear and finish in oven.

    Oh man, I would love a freeze dryer. I do a little canning, tomatoes and jellies mostly, but I found out that a vacuum sealer is amazing too! I bring my squash, green beans, okra, etc. in, and immediately wash and slice them, and let them sit to drain and dry, then vacuum seal and freeze. No need to blanch! They taste garden fresh!

    I need to make saurekrut today.
    Lol sometimes 🐛 taste great...too funny. Bugs are a gardening fact of life. We just pick em out. Now if it's a tomato worm. Yikes I do not touch them...grands help this Squamish Grammy with that. Here in Michigan we have to wait until spring for the pleasure of fresh vegetables.
    I'm harvesting snow, eggs, and fermenting organic vegetable from the store.

    Right now I'm canning red potatoes. We can and dehydrate and love eating those foods. And we also are getting busy using our freeze dryer

    Those carrots and brussel sprouts look awesome! We love brussel sprouts but in 3 years of planting I only got 1 Lol. Maybe 2022 will be my year. Love your guys videos

      You got this, remember to pinch the bottom leaves off at the stem when you start noticing the little Brussels forming 😉

    I soak my broccoli (etc) in a cold salt water bath when I bring them in from the garden. Those cabbage worms, if there are any still on/in the broccoli, will die and detach. Works like a charm.

    I'm not harvesting anything, as I have a garden, as opposed to a farm ( I just enjoy watching homesteading videos, as I hope to one day have a homestead), and there is currently snow on the ground. But I vacuum seal and freeze my summer produce.

    i am currently harvesting snow lol Im in Northern Wi and this is the dead of winter. had -12 without the windchill today. Im growing Anaheim and Cayanne peppers in my greenhouse though!

    I agree I do not like canned veggies. I freeze mine but I do can lots of other things such as pizza sauce, spaghetti sauce, tomatoes (whole,crushed, roasted and diced) salsa, fruit from our orchard, meats and mushrooms.

    If you wash your floreo ts in salt water you will wash out most of the bugs before processing your food. I prefer to do it this way myself. The salt makes them crawl out of the food. Not foolproof of course but it certainly helps. Learned from my mother over 50 years ago :)

    I harvested a large handful of broccolini this morning, brought it in and chopped it coarsely to toss in a skillet with my eggs. After the fact I thought, Gosh, I hope there aren't any worms in there. I don't even wash it off when I cut it fresh like that. A little olive oil and garlic, and breakfast is served!

    You probably know, Im still learning but read if you take couple bottoms leaves off brussel sprouts, the energy will go to get bigger sprouts. I might try that this year.

    I’ve never grown broccoli or cauliflower and what little I’ve frozen of those two came from the grocery. I just cut the pieces off the stems and put them into bags (after a quick hot bath) cooled and froze them. I helped my mother with lots of green beans and the way they taste the freshest is canning! We canned many dozens of jars of delicious green beans. When we later fixed them, they tasted very fresh...just like right out of the garden!

    Soak your vegetables in water, and the bugs will climb off, and then prepare the vegetables any way you want. Some people even use salt water.

    Pick, rinse and freeze. That’s all I do for everything I grow. Today it snowed 5 inches so I pulled pea shoots from the freezer as a treat for my chickens.

    We normally freeze stuff but I want to get away from freezing so much. When a freezer breaks down your up a creek if you can't get a replacement right away.
    Nathan and his jokes about bugs. I have probably had my share - been outside at games - yelling when suddenly a bug flew into my mouth. My mom always said a little dirt or bugs want hurt anyone - Sebrina is proof of that. Guess when I was little she caught me eating dirt - lol.
    The harvest looks amazing.

    A saltwater soak on veggies can help draw out creepy crawlies...especially on cabbages but cut them in half first. The CZcams channel Wicked Kitchen makes a mock "chicken fried steak" out of cauliflower steaks...and it's freaking delicious! Just a thought with all that glorious cauliflower to eat up. 😋

    We drive the insects out of our broccoli by soaking it in a solution of 1/4 cup salt to 1 quart water for a half hour. Then, when we blanch it (4 1/2 minutes in our high altitude) sometimes one or two more little worms will surface. Then, we cool in ice water, drain, and freeze for about an hour or more on a cookie tray. When it’s almost totally frozen, we then vacuum seal it and no moisture gets sucked into the seal area, because it is frozen. I do the same thing with other vegetables that I freeze.
    I like canning some vegetables also, in case the power goes out and the freezer thaws. Also, remember that with dehydrated and freeze-dried foods, you need to store a good amount of water to keep yourself hydrated because there is no moisture in those foods. Thanks for sharing this great video.

    I feel the same about canning. I certain things, eg, jams, jellies, salsa, cowboy candy, applesauce, etc., but I’m not thrilled with canned vegetables and I opt to freeze those instead. I think it’s a texture thing with me. Mushy and super soft green beans, carrots, potatoes don’t appeal to me. I’m looking forward to seeing how you guys like the freeze dryer for you vegetables. I know you’ll be honest in your review, so I’m looking forward to seeing your videos on the freeze dryer.

    My favorite thing to make with my freeze drier so far is freeze dried skittles and gummy worms. It completely changes them and amplifies the flavors. I can't wait to see what you try.

    Ok Nathan I cook primarily in cast iron. My veggies I usually just steam. For Brussel sprouts I usually steam a bit first then put in my cast iron. I’d love to see you share some of your vegetable cooking in your cast iron. Like your green beans and your broccoli.

      Do you have a favorite recipe you use? This past season was my first with a great carrot harvest, so we just dealt with the carrots. I would like to use the tops as well next year (no chickens or pigs here).

    If not blanching you can easily do a saltwater bath and rinse bath 20-30 minutes each. It kills everything. Been doing it for years.

    You know you can store root crops in the the ground over winter if you cover them with straw and hoops. If you don't have plans to process or use them right away.

    For the bugs you can put your veggies in water and vinegar for 10 minutes before bleaching them and they just fall out.

    We LOVE our freeze dryer! We purchased it the beginning of last year and there are just endless opportunities to utilize it. I think the only downfall would be we need two more with the amount of food we harvest. Best additional appliance we've ever spent money on besides our feather plucker.

    Wonderful harvest. Nice big carrots 🥕. Thank you for showing us how you prepare and preserve cauliflower and broccoli. We never ate bugs 🐛🐜🪲, and washed 🚿 our produce 🥦🍓🥕🥔🥒🍒🫐 well. Our Dad used to tease us that free "bug juice" would flavor our food 😋 and add to our protein. Glad we never experienced that 😊.

      If you have eating can food from the store you've eaten many bugs. Years ago I worked in a cannery they do not take the time to remove the bugs they just get chopped or juiced with the plants!

      Years ago, I opened a can of generic green beans from the grocery store and dumped it into a saucepan and a whole entire grasshopper ( length of the can) was in them, fully cooked. I threw the whole contents out anyway lol

    I do not have a freeze dryer and don't see it as something I can invest so much money into right now. I did just get a dehydrator and I can a few things. I love the videos, but I must admit the freeze-drying video's will probably be skipped. Maybe suggest things that can be dehydrated or freeze dried.

    Hey Nathan! Do you guys have a recommendation for a good vacuum sealer? Our FoodSaver stopped working this summer, at the peak of green bean season. Just stopped making a full seal at one tiny spot in the line and we lost several batches of beans. Don't want to just buy the same one if it's only going to last a year or two.

      Some people don't blanch. We've tried that in the past but it didn't turn out right for us.

    I try and double seal my bags. After doing the initial vacuum seal I move the bag down a touch and seal it again.
    Best food processor I've used is the Cuisine art 14 cup. Pricey but if doing a lot of prep and harvesting it more than pays for itself!

    I love cauliflower but not a fan of riced cauliflower. How do you season it to taste?

      Great question. I use soy sauce and garlic salt and let it simmer for 10 minutes and then I sprinkle it with sesame seeds or everything bagel seasoning

      We puree and can most of our tomatoes. The ones we don't, we just put whole in a freezer bag to freeze. Then we can take out what we want when we need them

    Speaking of bugs ugh we had been eating fresh cherry tomatoes off the plant in the summer then one time we were cutting them up for a tray and found a white wormy looking thing on the inside. It looked like it had the smallest ever tunnel from the stem in like it wasn’t noticeable at all! Does anyone know what this would have been and how to prevent. I can’t even imagine how many bugs we all ate before this ugh lol

    Vinegar works well for those worried about bugs. I add it to cold water as a quick wash before processing veggies.
