5:31 No, it is not the missing geometry, it is the normals. Go to the Mesh properties (green triangle pointing downwards ) Under „Normals“ you will find „Auto Smooth“ turn that on.
Normals are bit more intricate but when you shade smooth the normals will be averaged between adjacent faces. Auto smooth will prevent that averaging for adjacent faces when the angle between the two is higher than the value next to „auto smooth“ (hard to explain in text)

when he says there's not enough geometry it's because he wanted a high poly hardsurface look, and the only way you can get that is by making the topology super dense and adding bevels everywhere with no sharp edges, of course your explanation is still right but that's not what he wanted to do lmao

I don't disagree that it makes a lot of polygons. But it has a lot of hidden benefits. If you make a good SubD model, you can translate it to NURBS in CAD software and make use of surfacing there. It can be a good way to have a single model driving a mult-res model for gaming, rather than relying on decimate modifiers or actually creating a new model for each version. And it can also help point out modeling mistakes as you make them, like oops, you didn't merge those two vertices, or you have overlapping duplicate edges, you missed a 5/3 sided polygon where you didn't intend one to be, etc. It's easy to be lazy with SubD, but it's a great way to use the exact same base model for a game model And for a video/rendered image model. Perhaps you can't see a good use in your workflow, but being sure your model is SubD capable is a great way to ensure you have designed a "good" low poly model.

And if you are going to use it don't use bevels or loopcuts to control the subdivs. Use shift E. You don't need to generate extra geometry for no reason. Atleast subdiv does something those bevels do nothing but bloat the geo.

Just started learning Blender, and it just blew my mind at the end there when I realized that the order the modifiers are placed in matter. I do music production as well, and I instantly made the analogy between this and audio plugin signal chains. When you commit the modifier changes to hard geometry, you could also make the analogy there between that and mixing audio down.
Maya doesn't come close to that kind of flexibility when it comes to non-destructive geometry modification filters.
