Brussel Sprouts w/ Pecorino and Thyme

  • Recipe:
    1 lb Brussel sprouts (halved)
    1/2 yellow onion (julienned)
    2 tbs EVOO
    2 tsp fresh thyme
    1/2 c pecorino (diced)
    Salt and pepper to taste
    Bring a pot of water to a boil and simmer the Brussels for 3 minutes, transfer to a bowl of ice water to cool. In a sauté pan add the oil and sauté the onions over medium heat for 1-2 minutes. Add the thyme then strain the Brussels and add them as well cook on each side about 3-4 minutes or until browned then season with salt and pepper. Turn off heat, mix in the pecorino and serve!
