Tasty Bite Madras Lentils is one of my favorites for an easy meal. Open packet and heat. Bright yellow box/packet. Pair with a grain. Can buy at Costco or individually at local stores. I want to try Seeds of Change Organic Quinoa & Brown Rice, I think it just needs heating.
Yes those are great -- I tend to pair with veggies b/c I need to watch carbs (diabetes) but yes I'd bet most people would have with rice or maybe naan bread
Hey, I'm not sure where you shop but if you're looking for somewhere super cheap to shop from Aldi is a fantastic place, especially for produce. I can get a month's worth of groceries for less than $100 almost every time. The only problem some people have with Aldi is everything is off-brand/knock-off. :)))
We don't have aldi here where I'm at right now, but I am looking forward to shopping there when I'm traveling!!
Yup, no Aldi in Bay Area. I think the closest is about 3-400 miles away in Fresno. That’s why we go to Trader Joe’s, twin cousin to Aldi. 🙃
Dude, go to the food pantries in town. In Idaho Falls, Idaho, they gave me free, hot meals to go, and snacks. Now I'm in Twin Falls, Idaho, where a food pantry just gave me 50 dollars worth of road trip snacks for free. At another place, they serve hot meals and give out groceries for free, and another place gives away free blankets and clothing for the winter. When I go on road trips, I go to these places and they're easy to find. In my next book, I'll have a chapter on how to get free stuff while living in a vehicle. I've never had to fill out paperwork or show any I.D. I just show up. Pay for food? No. I can get all my stuff for free. The latest.

Canned beans! They can be eaten hot (with the rice) or cold (in the salad). They’re a good source of protein and great for blood sugar control. Other things for variety: avocados, olives, apples, oranges, peanut butter. Single serve greek yogurt with a protein bar for breakfast. Apple with peanut butter for a snack. Any kind of pickled or fermented vegetables should keep just fine without being refrigerated, especially if you use them up within a few days. I’m thinking kimchee fried rice since you seem to like a lot of flavor and don’t mind spice. Speaking of which, Tabasco is mostly vinegar and keeps a lot longer than Sriracha. Not sure how you feel about sardines, but they’re high protein and a great source of calcium and omega 3’s. Neither mustard nor ketchup need to be refrigerated. It would be pretty easy to whip up a honey mustard dressing for a salad or wrap to add a different flavor profile.

Hi Elizabeth, another very informative video😊. Have you tried Javy coffee concentrate ? 35 servings per 6oz bottle. I’ve been using it for over a year now and I like how small the bottles are . Very convenient to make a fresh cup of coffee no matter where you are.

Yes I do have to watch $ when buying food at restuarants, it adds up. I do have a tent and enjoy tent camping -- not sure if I will bring it along just bc of the space. But it can be good to have a tent because sometimes the only spaces at a campground are the walk-in-tent spots (where you are not allowed to sleep in your car)
When you find the rice in bags like that, sorted out & quick cooking for a meal, does it have a long BestBy Date on them? I know you said storage is an issue, and it is for me in my PMC minivan camper. However, finding items like that on sale is important. I’m not a rice fan, but am going to try some of those small packets of lentils with Indian & other spices I think Loma Linda is the brand. I’m planning a long month or 2 trip next spring-summer, and was thinking if I can find those on sale I’d get a bunch to stash safely (critter proof bins). But first I need to try them to see if I like them… might cook well in a Pyrex pan in my HotLogic Mini while driving. Anyway, thought I’d share something different than rice that should store ok.
I do get the indian food packets from trader joes (probably similar) - they are good and add variety!

Sounds like you have bought alot of good things. I know that I need to diet, I'm putting on too much weight.
For me when I was diagnosed with diabetes and started testing my blood and counting carbs, I was no longer hungry constantly (even though I ate less) and I ended up losing weight, it was interesting

Elizabeth, I saw all the stuff you bought at the store, and I have to ask, Why do you spend money on food when you can get all of that stuff for free? In Idaho Falls, several churches gave out groceries, food snacks and hot meals - all for free. I'm currently in Twin Falls, Idaho, where I went to a food pantry in town, and they gave me a box with 50 dollars worth of road trip snacks for free. And this town has SEVERAL places where they serve hot meals. I never had to show my I.D. or fill out any paperwork. I showed up, and I told them I live in my truck. One girl even gave me a list of all the places in town that give away free stuff. You should look into that.
Thanks for reminding everyone about that -- I have checked and the big food bank around here has an income requirement where I make just a bit more than it -- you have to fill out forms to get a card and such. But yes I bet there are some places not like that
