    RAILWAY VEGETABLE CUTLET
    Preparation time 5-10 minutes
    Cooking time 25-30 minutes
    Serving 4
    Ingredients
    1 tbsp Oil , तेल
    1 inch Ginger , finely chopped , अदरक
    2-3 Green chilli , finely chopped , हरी मिर्च
    1 medium Beetroot ,pelled, chopped , चुकंदर
    1 Carrot ,pelled, finely chopped , गाजर
    5-10 French beans , chopped , फ्रेंच बीन्स
    Salt to taste , नमक स्वादअनुसार
    ¼ cup Green peas , हरी मटर
    ½ tsp Turmeric powder , हल्दी पाउडर
    1 tsp Degi red chilli powder , देगी लाल मिर्च पाउडर
    2 cups boiled Potatoes, peeled, mashed, उबले आलू
    ¼ cup White bread crumb , ब्रेड क्रम्ब
    2 tbsp Coriander leaves , chopped , धनिया पत्ता
    For Coating
    ½ cup Refined flour , मैदा
    1 tsp Degi red chilli powder , देगी लाल मिर्च पाउडर
    Salt to taste , नमक स्वादअनुसार
    Water as required , पानी
    1 cup White bread crumb , ब्रेड क्रम्ब , (for coating)
    Oil for shallow fry , तेल तलने के लिए
    Process
    Heat oil in a non-stick pan. Add ginger, green chilli and saute well.
    Add chopped beetroot, carrot and saute on medium flame for 2-3 minutes.
    Add french beans, salt to taste, green peas, turmeric powder, degi red chilli powder mix well and cook for 2-3 minutes.
    Add mashed potatoes and mix well. Cook on medium flame.
    Transfer the mixture into the large bowl. Let it come to room temperature.
    Add white bread crumb, coriander leaves and mix well.
    Divide the mixture into equal portions, shape them into diamond shape and coat with the slurry and breadcrumb coating.
    For Coating
    In a bowl, add refined flour, degi red chilli powder, salt to taste and water as required mix well and keep it aside.
    For Shallow Fry
    Heat oil in a non-stick deep pan, place cutlets on it and shallow -fry, turning sides, till golden brown and evenly cooked on both the sides.
    Garnish it with onion rings and mint sprig and serve hot.

    Well back in 90s we couldn't afford even the sleeeper class. So my travel experience is from General compartment which was way more adventurous. For me sleeper class was a rich man's thing and AC class was dream which I didn't even dare to dream. We used to carry just rotis and achar for our 3 day journey. For me when I was 10 years old I had a dream to buy and eat this railway cutlet once in lifetime.. Well times have changed and I am in better days now... This railway cutlet just painted my entire life journey back then... And tonight I will cook this and eat as many as I want... To remind myself of my very humble roots..

    Best train memory of childhood is definitely when we had a fear that papa would definitely miss the train while he went to fill water bottles . And the mom used to normalize us that he is your father , he'll definitely come ❤️

    My father in 70s for the first time traveled in a train to study in chennai ... he is from jammu and had never been to south .... when he first saw idli he innocently asked 'ye kaccha ata kyu khare ho' 😆😆
    He keeps telling me this story
    Now he has retired after a very high rank in delhi .

    My dad retired from railways last month. The trips in the train when I was small were filled with comic books in train and playing cards with bedsheet on our lap. And not to forget the yummy cutlets, aloo banda. We used to travel for a 3day journey with puranpoli and achar. Simple times those were❤️. Your recipe reminded me of those days.

    You know chef... in the journey of life it so happened that opportunity to travel by train became less and less for me... but believe you me recently I had to travel by train and the one thing that excited me and I actually craved for it, was the veg cutlet served in the train as breakfast. I waited eagerly for it to be served like a child awaits a treat... I was back to being a child with a cheeky smile as I dug into it..chef.. you you don't just bring us the recipes, but also some precious memories. . Love you for that

      yes, the bread slices were perfectly cut, with sides taken out and perfect white bread.. they also gave butter with it/ had some butter added to them :)

      I am actually sad that I cannot share your same sentiment, about enjoying his personal stories because this video has no English sub titles! It is the personal stories behind his recipes that make them so beautiful! I know that some of his videos have English, and that I am losing out on the ones without sub titles, but as long as I can experience the actual cooking techniques, I am grateful.

    I remember those chaiwalas who use to roam around chanting 'chai chai chai.....' looking at everybody...if u don't give them a look back they would simply continue chanting.....but by any chance somehow if u give them a look back and even for a glimpse u have an eye contact with them...they would suddenly stop.....pin point a finger at you and ask "Chai?"🤣

    The most memorable part of train journey was to get down at every station and have local food, bharuch seeng, sridhand in Surat, bhajiya in vadodara, mathura peda, Masoor dal pakoras in savai madhpur.... List goes on...

    Railway ka khana was such a respite post the home packed aloo, poodi n achaar finished, though as a family we are moving towards more healthier alternatives now, n definitely remember the yum cutlets and chef ranveer aced copying the announcement too😋💛

    Dadar - Nagpur Sewagram Express used to halt at 4 PM at Nashik in my childhood days. It reached Bhusawal junction at around 9. We always...ALWAYS had our dinner just before the station and used to be ready with our berths set up. We then had the typical platform wala bread omelette and I used to then look out of the window to count all the locos at rest in the loco sheds as the train departed the station. There used to be atleast 30 shining red and yellow locos sleeping or about to sleep. Will never forget those memories.

And sabse jada interest humko hota tha ki pantry kaisi hai toh nanaji hume leke ghumate Thai..Vo din hi kuch alag Thai... cutlets, chay, bread omlet ...ahhhh....     For me train journey is important because my father served Indian railway throughout his life , he retired as a station master and we also enjoyed staying in railway quarters. And yes the railway cutlet has a special taste to it. Now a days cutlets are served during breakfast in most of the Rajdhani trains

      I still wait for these cutless oops 😬 cutlets when I go to India. As a student in DU from Patna I’ve eaten them innumerable times but still find the taste so refreshing and novel. I had them on my train journey from Patna to Varanasi in December 2019. After this COVID-19 situation god knows when will I be able to visit India next.

    I love the traditional things we get on the train. Samosas, cutlets, omelettes, Curd rice, Veg meals, Banana fry(in Kerala) and the Tomato soup :) Pleasant things to have on short journeys. And the steaming tea at 6AM. Thanks for these recipes chef :)

    Hi Ranveerji, I tried Cutlets with your recipe and my daughter liked it very much. 😍. I dint had bread crums, so i used powdered chevda/poha. It worked well. Cutlets made my day with smile and full tummy of my daughter. 😊. Thanks for the recipe 💐

    Indeed. I have a very long experience of the IR. Travelled in trains run by coal engine.
    Food used to be roti, karela( bharva), bread butter jam for breakfast, buy shrikhand from Vadodra,drink the bottle milk from their booth.
    At vapi,buy chikoo,targola....
    A big family carried eathen pots( suraiye)...
    We too travelled by SL ( berths)both brother and sister on one berth and mom on a single berth.
    In those days it was a luxury to buy food on the train.
    😊 Thank you Ranveer for taking us back to the train journey.
    Till today, I still love the train journey,rather than a flight.😊😊

    Reminds me of Rajdhani and Shatabdi express trains where you open your eyes first thing they will serve you in morning is dip tea and cutlets with bread and butter for breakfast.
    Time moves so fast we just get older.
