I think the guys insulting your dish should be apologizing for costantly dissing other cultures takes on italian food. California sushi rolls are a massively popular american take on a japanese food but you don't see them complaining so I don't see how it is ok for Italians to harass people just cause they make a dish differently.

Filipino carbonara is prepared like that since Guancale and authentic cheese (Parmesan/Pecorino Romano) are very expensive and/or rare in the Philippines, you can only get them in high end groceries. That's why Bacon/Ham and Cream is used to emulate the emulsification of fat, cheese, and pasta water as it is way more cheaper and affordable by a common Filipino.
Why they call it carbonara then? Why not create a good flilpino name for this dish?
Actual carbonara is made with egg yolks, pancetta and parmigiano. Beans have no place in carbonara.
