I love your work Blake but steaming a steak tightly wrapped in foil for 10 minutes after cooking just doesnât work for me.
I love a good crust on a steak and this just kills it. Rest it, sure, but not mummify it.
Do the mummify then chuck it back in the pan piping hot 30 secs each side to finish it off. Best of both worlds

no Jason.foil is better option.you want the sauce to soak in as much as possible.a "crust" in not an element needed on steak.

Butter and basting produces a softer crust. It's a choice, richness of the butter vs a good crust. Both are valid, just depends on preference.

@@jasonhussey8412 I had a heatlamp to rest protein under. Other common places are by the burners or even in clingwrap (see marco cooks for floyd), each requires an adjustment in how far you take the product, to account for the temp of the resting area. Foil is a valid option, would need to cook it more under from what you want, to account for the heat trapment.

Just oil the steak and not the pan
This is the way.
Doesn't really make sense basting the steak without searing/forming a crust especially when you've got too many herbs on top to begin with. Wrapping it in foil continues the cooking process by steaming it, so the meat doesn't properly relax. Don't get me wrong, if you want a juicy steak without a crust this is one way to do it, but restaurant quality I'm not so sure

Fuckin hell mate thats way too much salt and way too much butter. You put the herbs, garlic and butter after flipping the steak and baste the hell out of it. The end result however looks good i must say.
