Few things beat a steak grilled over fire, but with colder months approaching - and really anytime - butter basting indoors is a great option. It's a really simple technique with incredibly flavorful results. Make sure you use a high-quality butter like Challenge Butter (challengedairy...) - which is churned fresh daily and farmer owned.
To begin, Dry the exterior of your steak extremely well, salting at least 1 hour prior (ideally overnight) if you have time. Using a high smoke point oil like avocado, sear the steak over high heat. Flip frequently.
Once a crust starts to form, add your butter and aromatics, adjusting the heat so it bubbles but doesnât burn. I find that a half a stick of Challenge Butter is the perfect amount. Baste the steak, focusing on areas of the crust that are lighter. Think of the butter as a golden oven, distributing flavors and cooking all sides of the steak. Remember to flip frequently.
Pull the steak around 115F for medium rare, let it rest on a rack to protect the bottom crust. Reheat the butter and pour on top of the steak prior to slicing to awaken the crust. Slice and enjoy! #AD

Get a cut from your local butcher and try this technique. Just did it this weekend and the quality was miles ahead of what you find at a grocery store.
Prime is worth the money and the technique really is simple to do once you try it. Like Saint Fro said; hit up a butcher and give it a go
This is from Blackhawk farms. The quality is really good but you can find similar cuts at the grocery store! Prime grade can be a bit more expensive but the marbling is great. Keep your eyes out for when itâs on sale đ

That butter is actually really good. It's just cream and milk (and there's a salted option as well). I was looking for a butter that wasn't made with 5 different oils and other questionable ingredients and I haven't looked back since.

For anyone wondering how long to sear per side; It depends on your stove and pan you will have to see for yourself, usually a minimum of a minute per side for a good sear though. To tell doneness you can use a meat thermometer or with experience you can tell by touch. Also resting is very essential for an even cook.
to make a medium rare is about like 2 minutes each side. it doesnt really depend on the stove, all stoves have just about the same amount of heat so it doesnt matter. the more bloody the steak, the better.

Fwiw, he said in another video that you can salt it while you prep everything else. Even just an hour salted helps pull moisture out. Hope that helps!

This is perfectly cooked, let me explain.
See, when steak is first cut, itâs cleaned to get rid of possible bacteria and parasites, even though itâs cleaned, bacteria and parasites can still get on the meat, even though it is on the meat, steak is a muscle, muscles are very strong compared to bacteria and parasites, and since its tough, it canât be penetrated by the bacteria and parasites, it would be like trying to dig into a 100 foot thick titanium wall. Once the steak hits the hot pan, allllll the bacteria and parasites gets killed. Blue rare steak is also safe as long as it has been seared enough, medium rare is perfectly fine to eat, and the red stuff coming out of the steak isnât blood. Yes, muscles like steak has blood inside of it, but only when the cow is alive or if the meat is cleaned and the blood is removed. The red liquid is a protein called myoglobin, myoglobin is in every single steak you ate, yes, even well done, when the steak is overcooked, the myoglobin begins to darken, which is why its a grey color, a lot of the juices you see leave the steak is the myoglobin. Cooking it well done makes it chewy, hard, and flavorless, and a lot less juicy. Also, well done steak can also cause health issues including cancer. I suggest that you maybe consider growing up and actually call medium rare steak cooked?

I like to smoke mine first. I usually dry brine for 48 hours, I tried 24 hours but it's really not enough time for the salt to fully penetrate. Then I smoke them on the treager till the reach about 120 then I baste them with butter, garlic, and rosemary till they reach 135 and they are usually perfect. The hardest thing is to get a good sear before they go over temperature.
