Fried Pork with Black Bean Sauce | wa's Kitchen

A lovely dish that is one of my favorites with an off-the-shelf sauce this time. A taste one can return too endlessly!

Ingredients :
- 1 onion
- 430g pork belly
- 1/3 tsp baking soda
- 1/2 tsp sugar
- 1/2 tsp white pepper
- 5 tbsp water
- 1/2 to 1 red bell paper
- some basil
- 2 garlic cloves
- 10 to 12g ginger
- 2 tbsp sesame oil
For the sauce :
- 1 tbsp shaoxing cooking wine
- 1 tbsp oyster sauce
- 1 tbsp douchi sauce
- 1.5 tsp sugar
- 1 tsp corn starch
- 5 tbsp water
- 1 to 2 tsp chili oil
- 1/2 tsp Chinkiang black vinegar
