The Wolf Convection Steam Oven (CSO) makes it easy to get perfect results. Just select the GOURMET mode and choose from any of the dozens of options available and follow the on-screen instructions.
In this case, select GOURMET, then MEAT, then LAMB and follow the steps. Be sure to use the temp probe as this is how the oven knows how much heat/steam to use to get the results that you want. Easy!
