I found this bowl of Mi Quang to be too sweet for me, but if you love food on the sweeter side, then this is all for you.

Market Phan Thiet- Markets are the life of cities, especially in Vietnam. When exploring market Phan Thiet remember to look out for the sweet treats such as Banh Flan, located on the right side of the market. She usually sales from mid morning until sold out. And then make your way to the food course in building A for a very sweet and special lady that has been selling Che for more than 20 years. Selling for most the day, best eaten around lunch or mid afternoon.

Bibo- The seafood restaurant you need to go to when in the Phan Thiet/ Mui Ne area. Having been visited by many famous individuals the reputation here was built for good reason. Doing seafood the right way, ultimate freshness and cooking it perfectly. Everything had amazing flavor, with only a few dishes being too heavy on the sweetness for me. Come here with many friends and order as many dishes as you can, the best for me being: razor clams with water spinach and garlic, Sour soup with prawns.

Chúng mình là người VN nhưng cũng không được ăn nhiều món VN như bạn đâu. Nhìn những món này mà phát thèm! Không muốn tự khen đâu nhưng quả thật người VN rất sáng tạo trong việc chế biến món ăn, vừa có cái gì đó đặc trưng, lại rất đa dạng, mỗi vùng miền mỗi nguyên liệu và kiểu chế biến khác nhau.
I visited first time in phanthiet in 2007,I could not eat some local dishes because of its sweetness but I enjoyed very much all delicious meals at 3/4 hotels at muine beach,loving and enjoying all your explorations of Vietnamese cuisine across the country thumbs up,thanks Max

When I went to Vung Tau and Ba Ria area, my aunt and her husband took us to this restaurant, sorta along a creek. The dish that they ordered was a raw fish salad. The fish was similar to a mackerel or sardine, but they filleted it. I was skeptical because I would not eat anything raw. It turns out, the fish was lightly pickled in a vinaigrette and tossed in an assortment of herbs. You wrap it in the rice paper as well. However, they would fried the leftover fish bone as well. Essentially, you wrap the salad and fried fish bone into the rice paper and dip into nuoc mam. It exceeded my expectations and was one of the best culinary experiences.

So surprise to see lotus root used for the dessert at the stall inside the market, look very interesting. First time I see lotus roots used for sweet dessert, always associate lotus roots for cooking of savoury dishes. 😀

No need to wet rice paper in Vietnam, it’s different from the states. They’re more soft and pliable.
The sour is from vinegar
(They use vinegar to make the fish eatable)
