Instead of using a masher, I use an immersion blender. You are correct the gravy is amazing. I usually have mashed potatoes, so I use the water from the potatoes to mix in the gravy.
It is amazing how brazing makes the roast so much juicier.

I haven’t wasted them. They gave out all the nutrition, leaving just some fiber left.
