Cheesecake is truly one of a kind. I've developed a recent obsession with it and I don't think I'll ever get over it. If you're not familiar with Basque cheesecake, let me enlighten you. It's also known as burnt cheesecake, but despite its name, it's not actually burnt. The unique texture is achieved by baking it at high temperatures, which caramelizes the sugars and creates a delicious crust.
Ingredients
200 gms cream cheese
10 gms sugar
70 gms curd
100 gms condensed milk
50 gms heavy cream
1 tbsp all-purpose flour
1 tsp cornflour
Method
1. Preheat the oven to 200 degrees Celsius and line parchment paper to 6-inch tin.
2. In a bowl, cream together cream cheese and sugar using an electric whisk.
3. Then add curd, condensed milk and cream and whisk everything together.
4. Lastly, whisk all-purpose flour and cornflour to it.
5. Transfer the batter to the lined tin and bake it for 20-25 minutes until the sides are set and wobble in between.
