    Marinating Tofu
    Tofu - 300 Grams
    Marinade - 3-4 Tablespoons
    Marinating rest of the vegetables
    Remaining Marinade
    Mushrooms - 250 Grams
    Carrot - 1 Medium
    Bell Pepper - 1 Small
    Frozen Green peas - 50 Grams
    Potato - 1 Medium
    Fried Onion
    2 Medium onions

      The recipe looks good but many people commented about the yoghurt and are probably disappointed because the title led them to believe it was vegan. Vegans don't consume any dairy (cheese, milk, ghee, yoghurt, eggs etc).

    I've prepared this recipe today!
    I had to change some ingredients solely because I did it with what was available (like using jackfruit meat instead of tofu) and I've used garam masala instead of cardamom, because it was easier for me to find it.
    But I'm very positively surprised! It has this complex mix of flavors, plus the texture of the basmati rice with the vegetables, star anise mixed with curry... Amazing!

    This looks really good. I've never seen someone put whole spices into the water that the rice is being soaked in, but I guess it makes sense that it would impart flavor to the rice through the water. I'll consider trying that with chickpeas and lentils too. I've also never seen someone layer vegetables, rice, fried onions, chopped herbs in sequence like you did here - I wonder if that layering approach, rather than mixing it all together, adds more flavor? Either way I wonder how the layered flavor compares to the non-layered flavor. Very interesting. I will be trying out this biryani at some point in the future. You seem very passionate about cooking vegan food. Thanks a lot for sharing.

      Yes the spices will impart the flavors in the rice, and biryani in itself is a play of flavors- so layering them will help it to keep it a little uneven. I know that sounds weird but it plays a key role in the big picture. I will look forward to your feedback

      ​@@Foodotomic Thanks for the explanation. Just curious if you've ever tried a "test", where you cook one small batch of rice putting spices in the soaking water (the control sample), and another small batch soaked with the spices? This will allow you to see whether there is any difference in flavor between the two, and if so, how much of a difference.
      Personally I think performing little experiments like this can help us to better understand the mechanics of cooking, and I'd recommend trying it if you haven't done so already. I'll probably try this experiment in the near-future - if the spice-soaked rice has a lot more flavor, that will be a game changer for making rice in my opinion. I'm surprised I've never seen this method mentioned elsewhere.
      The layering method is something I've now seen in one other recipe, a Persian recipe called . I look forward to making both your biryani and that Persian rice dish.

      @@Keralite29 Oh, I absolutely love experimenting with food, and I make Biryani recipes both ways depending on the audience. Some of my friends don't like the strong flavor of spices, so I recommend this technique, but for those who do, I add them to the rice while cooking and then separate them once done. But you are absolutely on point unless you experiment, you won't know which one you personally like :) I love to challenge the traditional ways of cooking and always try something new or in-between which is easy and delicious :)

    Tried it. I was overwhelmed with the number of steps as I usually make very basic rice. I didn’t have that yellow saffron threads to make saffron water with so I left it out. I must say thank you for the recipe as I have always wanted to try making this delicious Indian rice. It came out so-so, could have been better, but hey it’s my first time. Will definitely try your recipe again someday. I am now very exhausted.

      Ok, so my family just ate it and said it tasted just like the local Indian restaurant we go to. They said it’s the best rice I’ve ever made ( comment courtesy my 13 yr old son. He hurriedly scuffed down the rice and went for seconds. Thank you again for this amazing recipe.

      It was so delicious. I did not have potato or pea so it heavily included many mushrooms :)
      Thank you again! I do have a question! Instead of saffron, do you recommend curcuma/turmeric? I read online that is a descent replacement but I am wondering if you have a better substitute

    I don't like tofu much. It's just the texture. In stead of the tofu I marinate the same amount of butternut 1 inch cubes. Tastes amazing. Thanks for sharing a great recipe. I try to restrict myself to 1 Biryani meal per month...

    What is wrong with you people? Do you need to have every little thing spelled out for you? If you are cooking VEGAN, you use VEGAN ingredients! Do people have to put the word VEGAN in front of every ingredient in a VEGAN recipe? And PLEASE READ THE COMMENTS!     Wrong title. At 1.30 mins she added 200 ml yogurt or curd. How come this is a VEGAN recipe? As I am a lactose intolerant this video disappointed me 😏
    Anyway nice Veg biryani recipe 👍

      It is Vegan Yogurt Hems, I mentioned the same in the description section too :) now a days we get a lot of options for both Vegan curd and yogurt.

      It's 100% vegan and there are a lot of different styles Biryani is prepare in India and every style is suthentic in itself
