@@Xpninjadan I think it's some kind of batter too. Like a pancake. Maybe higher water and fat so it doesn't burn. I've never seen anything like that before.

If they use more eggs, it will cost more to wrap the omelet nicely, so they use that grid pattern pancake to cut the cost..

Yeah it appears to be for structure and nothing else. Kinda like reinforced concrete, the egg is fine until it tears, and with fat helpings of tofu and rice it is smart. Functional, but at no way aesthetically useful.
An engineer type mind must have come up with this dish

If the lattice were all outside, it could potentially start falling in pieces as you eat it.

Zulliantiger some don’t like the texture. For me if you try tofu, or deep fried it’s definitely good as it absorbs flavour quickly
