- I really wanted to focus an incredible amount of time working on the taste for this creation.
It is composed with a crunchy sweet dough, a moist peach sponge, a sous vide slow cooked (16 hours) peach compote, and a light peach mousse.
The rest of the ensemble is crafted out of thin layers of white chocolate!

I'm so glad this Guy always eats whatever he cooks/bakes. Food is for eating, wether it's common mashed potatoes or chocolate sculptures.

Honestly the way he uses the tools and molds is an absolute engineering feat. Then he puts that together with his artistry and bam, pure magic.
It's funny you say that bc the most fascinating thing to me was he only used his thumb to make the wings. I would have never believed that if I didn't see it.

You'd think after seeing dozens of Amaury's videos you'd get used to the amazement of his talent, but nope. Every single time I'm absolutely blown away.
The fact that these creations are always actually edible instead of just made to look pretty is so amazing.
It’s refreshing to see him put just as much emphasis on taste as he does design and presentation.
For anyone wondering: what he does with the peach in the beginning is called blanching. It can be done with a blowtorch, or more commonly, boiling water. It makes it very easy to peel the fruit. First, you submerge it in the boiling water for about 30-45 seconds, then cool it completely in ice cold water. The skin should come right off!

I was thinking the blowtorch was also caramelizing the sugars as well as removing the skin... blanching it would too but I would think in a different flavor aspect.

Персики чистить могу… и всё остальное могу… - но лень… 😊и смысла не вижу- 2 или 3 часа ковыряться с каким то лебедем на 25 грамм… но и платить 25 долларов за штуку такого пирожного - мне жалко… посему - 1. Ингредиенты все оставить как есть..2. Предать им форму корзиночек. 3. Состряпать на вид менее привлекательные пирожные. 4. Накормить всю семью и гостей
Almost anything. Quickly boil fruit, blowtorch the skin, them peel skin off.

Everytime I see one of your videos I initially want to skip past it thinking it's another recipe too complex for me to try to learn right now with my busy life, but then I recognize it's you by your style of creation and it always brings a smile to my face. I may never be able to bake a beautifully and elegant as you do but I'll enjoy watching everytime!
